I added a teaspoon of vanilla extract to the batter and it gave the pancakes a really nice flavor. I also used maple syrup instead of cinnamon sugar for the topping. It was a delicious combination.

I've made these pancakes several times now, and they've always been a hit. They're perfect for a weekend breakfast or brunch, and they're also great for meal prep. I simply make a big batch on Sunday and then reheat them throughout the week.
