ARUGULA SALAD WITH LEMON-GARLIC DRESSING image

Number Of Ingredients 12

Salad:
4 cups fresh baby arugula leaves
2 cups fresh baby salad greens
1 cup grape or cherry tomatoes
1/2 cup shaved or shredded fresh parmesan cheese
Lemon-Garlic Dressing
1 clove garlic minced
6 Tsp olive oil
4 Tsp fresh lemon juice
2 tsp spicy Dijon mustard
1/2 sea salt
1/4 fresh ground black pepper

Steps:

  • Combine fresh baby greens and arugula in a large salad dish. Slice grape tomatoes in halves and gently mix with greens. Just before serving pour Lemon-Garlic Dressing over top of salad and toss lightly. Sprinkle shaved parmesan cheese over top to garnish.
