Asian Chicken Salad (No Noodles) image

All the flavors of a Asian Chicken Salad without all the calories and fat of fried noodles.

1/3 c asian-style dressing, made with sesame seeds (homemade is best but store bought works)
2 Tbsp lime juice
8 oz cooked chicken, shredded
6 oz pakage coleslaw mix, without dressing
1 cucumber, halved lengthwise seeds scraped out and thinly sliced
1 red bell pepper, cut into narrow strips
1/4 c fresh cilantro, chopped
5 oz baby greens
1/4 c cashews or 1/4 cup peanuts, chopped

Steps:

  • 1. Whisk dressing and lime juice in a large bowl. Add chicken, coleslaw, cucumber, pepper and cilantro.
  • 2. Serve on greens and sprinkle with nuts.
