Steps:
- 1-put 1/2 the EVOO plus all lemon juice, garlic, cumin, garlic powder, onion powder, hot sauce, salt, pepper and shrimp in a large zip lock and refrigerate for 20 minutes (add 30 minutes for tough cuts of meat). 2- in a skillet add the remaining EVOO and fry the onions and pepper with a pinch of salt and pepper until they start to tenderize. 3- remove onions and peppers and set aside 4- put shrimp in skillet WITHOUT marinade and discard excess marinade 5- fry shrimp until pink and starting to brown (if shrimp are very moist you may have to drain the pan after a couple of minutes so they don't "boil" instead of frying...don't worry what you drain won't isn't needed for the shrimp to have GREAT flavor) 6- when shrimp are almost done add back the onions and peppers, finish to desired tenderness and serve in hot tortillas
