This dish was easy to make and very flavorful. I used a little less cheese than the recipe called for and it was still plenty cheesy. I would definitely recommend this recipe to others.

I've made this dish several times now and it's always a winner. The eggplant and spinach are a great combination, and the balsamic vinegar adds a nice touch of acidity. I usually serve it over rice or pasta.
