BANANA TEA BREAD image

Yield 2 loaves

Number Of Ingredients 12

1/2 cup butter, softened
1 1/3 cups sugar
2 eggs
1/4 cup sour cream
2 T rum (substitute milk if you prefer)
1 t almond or vanilla extract
2 cups all purpose flour
1 1/2 t baking powder
1/2 t baking soda
1/4 t salt
1 cup mashed ripe bananas
1 1/2 cups chopped pecans

Steps:

  • Cream butter and sugar together until light and fluffy. Add eggs, sour cream, rum and extract, mixing well. Combine flour, baking powder, baking soda and salt. Add to creamed mixture alternately with mashed bananas, mixing lightly after each addition. Stir in pecans. Pour batter into 2 greased 9x5x3 loaf pans or prepared muffin tins. Bake at 350 degrees for 1 hour and 10 minutes for loaves, as above for muffins.
