BLACK BEAN-CORN SALSA image

Number Of Ingredients 12

1 (15ounce) can black beans, rinsed and drained
1 (11 ounce) can sweet whole kernel corn, drained
2 medium tomatoes, chopped
1 red bell pepper, chopped
1/3 cup chopped fresh cilantro
1/4 cup diced red onion
1 minced fresh jalapeno pepper-add a few seeds to make it hotter
-3 tablespoons fresh lime juice
-1 teaspoon salt
1/2 teaspoon ground black pepper
1 avocado, chopped
-Tortilla chips or Fritos scoops

Steps:

  • Combine black beans, corn, chopped tomatoes, and next 7 ingredients in a bowl. Cover and chill at least 2 hours. Add avocado just before serving. Serve with tortilla chips or Fritos scoops. -- I never measure for this recipe, just add til the amounts seem right. ... I usually omit the avocado, tomato and cilantro completely- I don't like cilantro much and it will keep much longer in the fridge without the tomato and avocado. Have served it over a sliced avocado as a side dish for a luncheon meal. Enjoy!
