Black Walnut Bread image

Number Of Ingredients 9

2 cups all-purpose flour
1/2 cup sugar
4 teaspoons baking powder
1 teaspoon salt
1 cup chopped black walnuts
1 3/4 cups All-Bran® Original or All-Bran® Bran Buds®
1 egg, well-beaten
1 1/2 cups milk
1/3 cup shortening, melted

Steps:

  • 1. In large mixing bowl, stir together flour, sugar, baking powder and salt. Add walnuts and KELLOGG'S ALL-BRAN cereal. Set aside.2. Combine egg, milk and cooled, melted shortening in small mixing bowl. Add to cereal mixture, stirring only until combined. Spread evenly in 9 x 5 x 3-inch loaf pan coated with cooking spray.3. Bake at 375°F about 1 hour or until wooden pick inserted in center comes out clean. Cool 10 minutes in pan. Remove and cool completely on wire rack.

This bread is a bit too sweet for my taste, but otherwise it's good. I might try reducing the amount of sugar next time.

I was hesitant to try this recipe because I'm not a big fan of walnuts, but I'm glad I did! The walnuts add a subtle flavor that really complements the bread. The bread is also very moist and has a nice crumb.
