1 cup butter
2 cups sugar
3 cups flour
4 eggs
1 teaspoon vanilla
1 teaspoon almond extract
1 teaspoon baking powder
1 teaspoon salt
1 (21 ounce) can pie filling
1 cup confectioners' sugar
1 tablespoon soft butter
1 1/2 tablespoons milk
1/4 teaspoon vanilla

Steps:

  • Cream butter.
  • Add sugar gradually, beating well.
  • Add vanilla, almond extract and eggs, one at a time, beating well.
  • Sift together flour, baking powder and salt.
  • Add flour mixture to butter mixture, beat well.
  • Grease and flour a 10" x 15" jelly roll pan.
  • Divide dough into thirds.
  • Roll out 2/3 of dough, place into greased and floured pan.
  • Spread on pie filling.
  • Roll out remaining 1/3 of dough; place on top of filling and seal, crimp or roll and flute edges.
  • (If you find it difficult rolling dough, it may be pressed into pan and top pressed out on waxed paper into 10" x 15" rectangle and transferred to top of filled bottom).
  • Bake 350 degrees for 45 minutes.
  • Mix together all glaze ingredients to make thin glaze.
  • Drizzle over cooled squares.

3/4 teaspoon baking powder
1 cup skim milk
1 teaspoon pure vanilla extract

Steps:

  • Grease and flour 3 (9-inch) cake pans.
  • Using an electric mixer, cream butter until fluffy. Add sugar and continue to cream well for 6 to 8 minutes. Add eggs, 1 at a time, beating well after each addition. Add flour and milk alternately to creamed mixture, beginning and ending with flour. Add vanilla and continue to beat until just mixed.
  • Divide batter equally among prepared pans. Level batter in each pan by holding pan 3 or 4 inches above counter, then dropping it flat onto counter. Do this several times to release air bubbles and assure you of a more level cake.
  • Bake for 25 to 30 minutes or until done.

1 cup margarine
2 cups white sugar
3 eggs
4 cups all-purpose flour
4 teaspoons baking powder
1 pinch salt
1 cup buttermilk
½ teaspoon baking soda
¼ teaspoon ground nutmeg

Steps:

  • Preheat oven to 350 degrees F (180 degrees C).
  • In a large mixing bowl, cream together the margarine and sugar. Add eggs and beat until fluffy.
  • In a separate bowl, mix together the flour, baking powder, and salt. Dissolve the baking soda in the buttermilk and add alternately to the margarine mixture with flour mixture.
  • Roll out dough and sprinkle with nutmeg. Cut with a biscuit cutter. Dough will be very soft and delicate.

½ cup butter
½ cup brown sugar
1 ½ cups all-purpose flour
3 eggs, beaten
1 ½ cups brown sugar
1 teaspoon vanilla extract
¼ cup all-purpose flour
¼ cup unsweetened cocoa powder
1 teaspoon baking powder
¼ teaspoon salt
1 ½ cups flaked coconut
1 cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, cream together the butter and 1/2 cup brown sugar until smooth. Stir in the 1 1/2 cups of flour. Press the mixture firmly into the bottom of a 9x13 inch pan. Bake the crust for 15 minutes in the preheated oven, until golden.
  • In a medium bowl, mix together the eggs and 1 1/2 cups brown sugar. Stir in the vanilla. Combine the 1/4 cup flour, cocoa (if desired), baking powder and salt; stir into the egg mixture. Fold in the coconut and walnuts. Pour into the pre-baked crust.

Here's a Paula Deen update of my mom's favorite cake recipe. I remember Mom using the recipe as it was, printed on the side of the "Swans Down Cake Flour" box. A great Birthday-Cake kind of recipe, it's called "1-2-3-4 Cake" because, the ingredients, at that time, were listed: "1 cup butter, 2 cups sugar, 3 cups cake flour, 4 eggs" etc. Paula's recipe simplifies some steps, with nothing lost in flavor and texture.

Little cakes made not in an oven but in a nonstick sandwich maker. Kids just love them as they interesting to look at and are yummy as well ! I generally use cooking oil (olive) but any other oil will do too. If one wants to use butter the same amount of butter will be just fine.

2 cups sugar
3 cups self raising flour
4 eggs
2 -3 drops vanilla essence
2 tablespoons chocolate chips

  • Whisk everything together except for the chocolate chips.
  • If the batter is too thick adding 1/2 a cup of milk would help.
  • Heat your sandwich maker, when heated spoon the batter on each depression, sprinkle a few chocolate chips and close the lid.
  • The mini-cakes will be ready in 3-4 minutes.
  • Repeat the procedure till the batter is used up.
  • Serve warm or at room temperature.
  • Decorating the little cakes with jam &/cream would make it more appealing for kids' tea party.

Because it's three layers, this sounds hard but it's worth it. My son is famous for making and taking these in to work. I've heard other names but here in the Northwest everyone knows them as Nanaimo bars. They are sold on British Columbia Ferries and at coffee stands. If you can't find custard powder, I've used instant pudding mix with good results.

½ cup butter, softened
¼ cup white sugar
5 tablespoons unsweetened cocoa powder
1 egg, beaten
1 ¾ cups graham cracker crumbs
1 cup flaked coconut
½ cup finely chopped almonds
½ cup butter, softened
3 tablespoons heavy cream
2 tablespoons custard powder
2 cups confectioners' sugar
4 (1 ounce) squares semisweet baking chocolate
2 teaspoons butter

Steps:

  • In the top of a double boiler, combine 1/2 cup butter, white sugar and cocoa powder. Stir occasionally until melted and smooth. Beat in the egg, stirring until thick, 2 to 3 minutes. Remove from heat and mix in the graham cracker crumbs, coconut and almonds (if you like). Press into the bottom of an ungreased 8x8 inch pan.
  • For the middle layer, cream together 1/2 cup butter, heavy cream and custard powder until light and fluffy. Mix in the confectioners' sugar until smooth. Spread over the bottom layer in the pan. Chill to set.
  • While the second layer is chilling, melt the semisweet chocolate and 2 teaspoons butter together in the microwave or over low heat. Spread over the chilled bars. Let the chocolate set before cutting into squares.

4 cups graham cracker crumbs
6 (1.5 ounce) bars milk chocolate candy bars
2 cups miniature marshmallows

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch pan.
  • In a medium bowl, mix together the melted butter and graham cracker crumbs. Press half of the graham cracker mixture into the bottom of the prepared pan. In the microwave or in a metal bowl over a pan of simmering water, melt chocolate chips, stirring frequently until smooth. Remove from heat and spread over the graham cracker layer. For easier spreading, refrigerate the crust while the chocolate is melting. Make a layer of marshmallows over the chocolate and top with the remaining graham cracker crumbs.
  • Bake for 15 minutes in the preheated oven, cool and cut into squares.
