The sauce has the consistency of maple syrup - never watery, never gluggy. This is easy and fast to make. Serve it up straight away otherwise the sauce gets absorbed into the cake!

1 cup (175g) brown sugar (, loosely packed (Note 1))
1/4 cup (30g) cocoa powder (, unsweetened (Note 2))
1 1/4 cups (315ml) boiling water
1 cup (150g) plain flour ((all purpose flour))
2 1/2 tsp baking powder
1/3 cup (70g) white sugar (, preferably caster/super fine but ordinary ok)
1/4 cup (30g) cocoa powder (, unsweetened (Note 2))
Pinch of salt
1/2 cup (125ml) milk
50 g / 4 1/2 tbsp butter (, melted)
1 egg
1 tsp vanilla extract

Steps:

  • Preheat oven to 170C/335F (standard) / 150C/305F (fan forced / convection).
  • Grease a 5 - 6 cup baking dish with butter. (Note 3)
  • Topping: Whisk brown sugar and cocoa in a bowl, set aside.
  • Whisk flour, baking powder, caster sugar, cocoa powder and salt in a bowl.
  • In a separate bowl or jug, whisk together the butter and milk, then whisk in the egg and vanilla.
  • Pour the egg mixture into the flour mixture. Mix until combined - it will be a thick batter.
  • Spread into baking dish. Sprinkle with sugar / cocoa mixture. Shake gently to spread out thinly.
  • Carefully pour the hot water over the back of a dessert spoon all over the top of the pudding - see photo in post or video below recipe. (Note 4)
  • Transfer to oven and bake for 30 minutes, or until the top of the cake springs back when poked lightly. The top will be a bit crusty, like the top of brownies.
  • Remove from oven, stand for just a few minutes (no more!), then serve immediately. (Note 5)

2 tablespoons butter, melted
1 cup self-raising flour
3/4 cup sugar
2 tablespoons cocoa
1/2 teaspoon salt
1/2 cup milk
1 teaspoon vanilla essence
1/2 cup brown sugar
1 tablespoon cocoa
2 tablespoons desiccated coconut
1 1/2 cups boiling water
1 piece of baking paper

Steps:

  • In a bowl, combine flour, 2 Tbsps cocoa, salt and 3/4 cup sugar. Stir in milk, melted butter and vanilla.
  • Spoon batter into a microwave ring mold or a microwave-proof casserole dish. Combine brown sugar, 1 Tbsp cocoa and coconut and sprinkle over the batter.
  • Pour hot water gently over the top. Cover with a sheet of baking paper.
  • Cook on HIGH for 6 minutes.
  • Leave to cool for 4-5 minutes before serving.
  • Serve with a little whipped cream or vanilla ice cream, if you like.

3 cups self raising flour
1 1/2 cups sugar
6 tablespoons cocoa, sifted
1 1/2 cups milk
2/3 cup canola oil
3 eggs
2 1/4 cups brown sugar, packed

6 cups boiling water

  • preheat oven to 180 Celsius lightly grease a large, deep, baking dish.
  • using an electric mixer, beat all the pudding ingredients together till well combined.
  • pour into baking dish.

  • pour the boiling water over the top of the sugar/cocoa mix.

100g butter , melted, plus a little extra for greasing
200g gluten-free plain flour
50g buckwheat flour
140g golden caster sugar
50g cocoa
1 tbsp gluten-free baking powder
2 tsp xanthan gum
4 tbsp milky coffee , made in a mug as if you're going to drink it
3 large eggs
150ml milk
100g milk chocolate , broken into chunks
vanilla ice cream or single cream, to serve
200g light muscovado sugar
25g cocoa

Steps:

  • Grease a 2-litre baking dish and heat oven to 180C/160C fan/gas 4. Boil the kettle. Put the flours, caster sugar, cocoa, baking powder, xanthan gum and a pinch of salt in a large mixing bowl. Whisk together the coffee, eggs, melted butter and milk, then pour onto the dry ingredients and mix together until smooth. Stir in the chocolate chunks and scrape everything into the baking dish.
  • Mix 300ml boiling water from the kettle with the sugar and cocoa for the sauce, then pour this all over the pudding batter - don't worry if it looks unmixed at this stage! Bake on the middle shelf of the oven for 30 mins until the surface looks firm, risen and crisp. As you scoop spoonfuls into serving bowls, you should find a glossy, rich chocolate sauce underneath the sponge. Eat immediately with vanilla ice cream or single cream.
