I make these fruit skewers every year for the 4th of July for the kids and they are always a major hit - older kids can help with the assembly. Don't cut the watermelon too thinly, otherwise the stars will break when you are trying to skewer them.

2 watermelons
1 (10.5 ounce) package fresh blueberries
wooden skewers

Steps:

  • Slice watermelon in thick slices. Cut out stars using a cookie cutter.
  • Skewer about 15 blueberries on a wooden skewer and 1 watermelon star on top. Repeat with remaining ingredients.

Assorted fruit of your choice: strawberries, seedless red grapes, sliced kiwifruit, sliced star fruit, kumquats and cubes of cantaloupe, honeydew or pineapple
1/3 cup sugar
2 tablespoons cornstarch
1 cup orange juice
2 teaspoons lemon juice

Steps:

  • Alternately thread fruit onto skewers; set aside. In a saucepan, combine sugar, cornstarch and juices until smooth. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Brush over fruit. Refrigerate until serving.

1 medium tart apple, cut into 1-inch chunks
1 medium pear, cut into 1-inch chunks
1 tablespoon lemon juice
1 can (8 ounces) unsweetened pineapple chunks, drained
24 grapes (about 1/4 pound)
24 fresh strawberries
COCONUT DIP:
1-1/2 cups fat-free vanilla yogurt
4-1/2 teaspoons sweetened shredded coconut
4-1/2 teaspoons reduced-sugar orange marmalade

Steps:

  • Toss apple and pear with lemon juice. Divide fruit into 12 portions and thread onto wooden skewers. Combine dip ingredients in a small bowl; serve with the kabobs.
