Steps:
- Preheat the oven to 350 degrees F (175 degrees C).
- Process graham crackers in a food processor; the finer the crumbs, the more the crust will stick together. Transfer to a bowl and mix with melted butter. Press and mold mixture into a 9-inch pie pan.
- Bake in the preheated oven for 10 to 12 minutes. Remove from the oven and let cool for 15 minutes. Leave the oven on.
- While the crust is cooling, combine condensed milk and egg yolks in a bowl; whisk until fully blended and no yolks are visible in the mixture. Slowly pour in Key lime juice while stirring until combined. Pour into the cooled crust.
- Return to the oven and bake until filling is firm to the touch and only slightly jiggly in the center, 10 to 15 minutes. Cool to room temperature before serving.

KEY LIME PIE WITH 5 INGREDIENTS
I wanted a quick and easy pie that would mimic the flavor of Key Lime Pie but without the fuss. I tried a popular on-line recipe but found that without a gelling ingredient, the pie was messy to serve and the slices ran together. To solve the problem, I added Instant Pudding Mix and was very pleasantly surprised with the result. Note: use a LARGE graham cracker crust (deep dish type). If your store only carries the small prepared graham crusts, use two crusts.

Steps:
- Combine sugar, eggs, lime zest, and juice in a medium nonreactive saucepan, and set over medium-low heat. Cook, whisking constantly, until mixture begins to thicken and holds the mark of the whisk, 10 to 12 minutes.
- Remove pan from heat, and whisk in butter, a piece at a time, until well combined. Strain mixture through a sieve into a glass bowl. Lay plastic directly on surface to prevent a skin from forming. Chill 3 hours or overnight to set the curd.
Tips:
- Use fresh key limes: Fresh key limes yield the best flavor for this custard. If you can't find key limes, you can substitute regular limes, but the flavor will be slightly different.
- Zest the key limes before juicing: Zesting the key limes before juicing releases the essential oils, which will give the custard a more intense flavor.
- Strain the custard: Straining the custard will remove any lumps and ensure a smooth, creamy texture.
- Chill the custard before serving: Chilling the custard allows it to set and develop its full flavor. You can serve the custard immediately after chilling, or you can store it in the refrigerator for up to 3 days.
Conclusion:
This 5-ingredient key lime custard is a delicious and easy dessert that's perfect for any occasion. It's made with simple ingredients that you probably already have on hand, and it can be ready in just 30 minutes. Whether you're serving it as a summertime treat or a holiday dessert, this key lime custard is sure to be a hit.
