SIMPLE TOMATO SOUP

This is my go-to tomato soup recipe. It's so easy and delicious. It's easily made vegan (if you use margarine instead of butter or 2 tablespoons of olive oil), ready in 30 minutes, and I give leftovers to my kids for lunch. If you like, you can add cream, but my family likes it the way it is. I usually serve it with rosemary bread for dunking.

Tips:

  • Use ripe, in-season tomatoes: This will give your soup the best flavor and sweetness. If you can't find ripe tomatoes, you can roast them in the oven to concentrate their flavor.
  • Don't overcrowd the pot: When you're cooking the tomatoes, don't overcrowd the pot. This will prevent them from cooking evenly and will result in a watery soup.
  • Simmer, don't boil: Once the tomatoes have softened, reduce the heat to low and simmer the soup for at least 30 minutes. This will help the flavors to meld and develop.
  • Use a good quality vegetable broth: The vegetable broth you use will make a big difference in the flavor of your soup. Choose a broth that is low in sodium and has a rich, flavorful taste.
  • Season to taste: Once the soup is done, taste it and adjust the seasonings as needed. You may want to add more salt, pepper, garlic, or herbs.

Conclusion:

This 5-ingredient tomato soup is a delicious, easy-to-make soup that is perfect for a quick weeknight meal. It's also a great way to use up leftover tomatoes. With just a few simple ingredients, you can create a flavorful and satisfying soup that the whole family will love.
