Steps:
- Slice cabbages into thin shreds, place in large both. (Don't worry if it looks to full, this will shrink in volume once dressing is added.).
- Grate carrots and add to bowl with cabbage.
- *Feel free to use a food processor for the above directions to save some time, make sure to use the slicing & grating disks.
- In a small bowl whisk together mayonnaise, sugar, vinegar, salt & pepper until smooth.
- Pour over cabbage & carrot mixture. Stir slowly until coated. Let stand 5 minutes or until it looses a bit of volume.
- Note: This dressing also works great for a bag of coleslaw mix, it is dryer than fresh cabbage so it soaks up more dressing.
- If not serving right away, refrigerate for up to 2 days for fresh or 1 day for bagged.

Steps:
- Whisk first 4 ingredients in large bowl. Mix in green onions. Add coleslaw mix; toss.
Tips:
- Use a sharp knife or mandoline to thinly slice the cabbage and carrots. This will help the coleslaw absorb the dressing more evenly.
- If you don't have a mandoline, you can use a food processor to shred the cabbage and carrots. Just be careful not to over-process them, or they will become mushy.
- You can use any type of vinegar in the dressing, but apple cider vinegar or rice vinegar are good choices. They have a mild flavor that won't overpower the other ingredients.
- If you like a sweeter coleslaw, add a little sugar or honey to the dressing. You can also add a pinch of salt to balance out the sweetness.
- Coleslaw is a versatile dish that can be served as a side dish, a topping for sandwiches or tacos, or even as a main course salad.
Conclusion:
Coleslaw is a delicious and easy-to-make side dish that can be enjoyed all year round. With its crunchy cabbage, creamy dressing, and sweet-and-tangy flavor, it's sure to be a hit at your next potluck or barbecue. So next time you're looking for a quick and easy side dish, give coleslaw a try!
