1 ½ pounds lean ground beef
2 cloves garlic, minced
salt and pepper to taste
1 (10.5 ounce) can condensed French onion soup
1 tablespoon Worcestershire sauce
2 teaspoons prepared yellow mustard
2 tablespoons cold water
1 tablespoon all-purpose flour
3 cups peeled and thinly sliced potatoes
2 (10 ounce) packages frozen mixed vegetables, thawed
1 cup shredded Cheddar cheese

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Cook ground beef in a skillet over medium-high heat until evenly browned. Drain excess grease. Season with garlic, salt and pepper. Stir in the onion soup, Worcestershire sauce and mustard, and bring to a boil. Mix together the cold water and flour, and stir into the sauce. Simmer over low heat for a few minutes, then set aside.
  • Meanwhile, place potatoes in a saucepan and add enough water to cover. Bring to a boil, and cook for 3 minutes, not until tender. Drain.
  • Spread half of the beef mixture in the bottom of a 9x13 inch baking dish. Arrange half of the potatoes over the beef. Cover with a layer of mixed vegetables. Repeat layers.
  • Cover the dish, and bake for 50 minutes in the preheated oven. Uncover, and sprinkle shredded cheese over the top. Bake for an additional 10 minutes to melt cheese.

A great meat and potatoes dish. Filling and tasty, the whole family loves it! My mom insists that I make this every time we visit. I got the base of the recipe from an old Taste of Home or Quick Cooking magazine, it's been awhile so I don't remember which one. I did tweak it a bit to suit my family's tastes. The frozen veggie amounts are approx, it changes every time I make it based on what I have in the freezer and my mood.

3 -4 medium potatoes, sliced
1 -1 1/2 lb ground beef, browned
1/2 medium onion, sliced
1 (4 1/2 ounce) can sliced mushrooms, drained
1 cup frozen corn
1 cup frozen green beans
1/2 cup frozen green pea
1/2-1 cup butter, melted
salt and pepper

Steps:

  • In a large, buttered 9 x 13 baking dish, layer sliced pototoes. This will be a few layers, depending on how big your potatoes are.
  • Add ground beef on top of potatoes, followed by onions and mushrooms.
  • The frozen vegetables are next and can be placed in any order.
  • Pour melted butter over all of the dish.
  • Cover and bake at 375 for 45 minute Till potatoes are soft, I use a glass dish and can eyeball it.
  • Let sit for about 10 min, serve, season, and enjoy!

It's one of those dishes you can always put togerther fast, and always seem to have the ingredients handy. I think it was about 5 or 6 years ago. Been making it every since.

1 garlic clove
1/2 cup onion, chopped
1/2 cup green pepper, chopped

2 1/2 cups tomatoes with juice, chopped
3/4 cup uncooked rice
3/4 cup grated cheddar cheese
