8 ounces whole wheat angel hair pasta
2 tablespoons olive oil
1 cup boneless chicken breast, sliced thin
1/2 cup chopped tomato
2 teaspoons minced garlic cloves
1/2 teaspoon thyme, dried
1/2 cup white wine
1/4 cup capers, rinsed and drained
1/4 cup parmesan cheese, grated

Steps:

  • Prepare pasta according to package directions. Heat olive oil in a nonstick pan. Add chicken and saute for 4-5 minutes. Add tomatoes, garlic and thyme; saute for 5 minutes, stirring occasionally. add white wine and capers; cook, stirring frequently, 3 minutes more.
  • Toss chicken mixture with pasta. Top with grated Parmesan cheese.
