MARINATED OLIVES - ACEITUNAS ALIñADAS

Marinated Olives - Aceitunas Aliñadas image

Spanish cooks like to buy their olives at the market and marinate them themselves. They add roasted peppers, lemon slices, along with thyme, bay leafs and other seasonal herbs, seeds and vegetables. A jar of these is handy to have in the pantry to serve with a selection of tapas and drinks. From the book "World Food - SPAIN" by Beverly Leblanc.

Yield 1 jar, 24-30 serving(s)

Number Of Ingredients 10

1 cup green spanish olives in brine, pimiento stuffed, rinsed
1 cup black spanish olives in brine, rinsed
2 ounces broiled and peeled sweet peppers, sliced thinly
2 -3 thin lemon slices
2 sprigs fresh thyme
1 -2 bay leaf
1 dried red chili
1/2 teaspoon fennel seed
1/2 teaspoon coriander seed, cracked slightly
extra virgin olive oil

  • Cooks note:.
  • Do NOT add sliced garlic to an oil marinade such as this because of the possibility of botulism.
  • If you store the marinade in the refrigerator, the oil will become claudy but it clears again as soon as it is returned to room temperature.
  • Cooking time is marinating time.

QUICK PICANTE SAUCE

Quick Picante Sauce image

Hot pepper sauce and a jalapeno pepper give this snappy sauce just the right amount of zip. It makes a great dip for tortilla chips or a tangy sauce for tacos and fajitas. This is always a big hit at parties and office gatherings. I even make it for my mother when she needs to bring a dip to a party. -Barbara Sellers, Shreveport, Louisiana

ACEITUNAS A LA SEVILLANA (SEVILLA-STYLE GREEN OLIVES)

Aceitunas a La Sevillana (Sevilla-Style Green Olives) image

Another recipe from Penelope Casas' "Tapas: The Little Dishes of Spain". This is best made several days in advance; I try to make it about a week before. She says it will keep for weeks in the refrigerator; mine never make it that long. As with her other recipes, try to use Spanish ingredients when available for the most authentic flavor. Times are approximate.

An easy Gazpacho recipe

Provided by David Kamen

Categories     Soup/Stew     Blender     Tomato     Freeze/Chill     No-Cook     Vegetarian     Cucumber     Bell Pepper     Summer     Chill     Healthy     Vegan

Yield Makes 8 servings

Number Of Ingredients 13

3 medium tomatoes, peeled, seeded, and chopped (about 3 cups)
1 large cucumber, peeled, seeded, and chopped (about 2 cups)
1 red bell pepper, chopped (about 1 cup)
1 medium onion, chopped (about 11/4 cups)
3 cups canned tomato juice
2 tablespoons fresh herbs (such as tarragon, thyme, or parsley), chopped
1/4 cup red wine vinegar
2 cloves garlic, peeled and finely chopped
2 tablespoons tomato paste
Juice of 1/2 a lemon
Kosher salt
Cayenne pepper
1 cup croutons, to garnish

Steps:

  • 1. In a bowl, reserve 2 tablespoons each of the tomato, cucumber, pepper, and onion to garnish.
  • 2. In the food processor or blender, purée the remaining ingredients (except the croutons) until smooth, adjusting the seasoning to taste with lemon juice, salt, and cayenne pepper.
  • 3. Cover and chill thoroughly, at least 3 hours but preferably overnight. Adjust the consistency as desired with water. Serve in chilled bowls garnished with the reserved vegetables and croutons.

Tips:

  • Choose ripe, firm olives for pickling. Unripe olives will be too bitter, while overripe olives will be too soft.
  • Use a variety of olives for a more complex flavor. Common types of olives used for pickling include Kalamata, Castelvetrano, and Cerignola.
  • Flavor the brine with your favorite herbs and spices. Common additions include garlic, thyme, rosemary, and red pepper flakes.
  • Be patient! Pickled olives take time to develop their full flavor. Plan to let them sit in the brine for at least 4 weeks before eating.

Conclusion:

Pickled olives are a delicious and versatile snack or appetizer. They're also a great way to add a pop of flavor to salads, sandwiches, and pizzas. With a little planning, you can easily make your own pickled olives at home. Just follow these simple tips and you'll be enjoying delicious, homemade pickled olives in no time!
