Yield 6-8 serving(s)

Number Of Ingredients 9

1 (8 ounce) package acini di pepe pasta, cooked per pkg directions and drained well (rice shaped pasta)
1 cup chopped of fresh mint
1 cup chopped fresh parsley
3 cups chopped peeled and seeded tomatoes
1/2 cup sliced green onion
1 minced garlic clove
3 tablespoons lemon juice
1/4 cup olive oil
salt and pepper

Steps:

  • Combine and mix cooked pasta with all vegetables.
  • Combine the dressing ingredients and mix well.
  • Pour the dressing over the pasta and vegetables and mix gently.
  • Adjust with extra lemon or salt and pepper or olive oil to your taste.
  • Chill until ready to serve.
  • Stir before serving.

Tips:

  • Use a small pasta shape. Acini di pepe is a very small pasta, so it's important to use a similar shape when substituting. Good options include orzo, pastina, or stelline.
  • Cook the pasta according to the package directions. Most small pasta shapes take about 8-10 minutes to cook.
  • Add the pasta to the soup or stew towards the end of the cooking time. This will prevent the pasta from becoming overcooked and mushy.
  • Use a light hand with the salt. Acini di pepe is a delicate pasta, so it's easy to overpower it with salt. Add salt to taste, and start with a little less than you think you need.
  • Garnish the soup or stew with freshly grated Parmesan cheese or parsley. This will add a touch of flavor and color.

Conclusion:

Acini di pepe is a delicious and versatile pasta that can be used in a variety of dishes. If you don't have acini di pepe on hand, you can easily substitute one of the many other small pasta shapes available. Just be sure to cook the pasta according to the package directions and add it to the soup or stew towards the end of the cooking time. With a little planning, you can easily enjoy a delicious meal that uses acini di pepe or a suitable substitute.
