1/4 cup olive oil, divided
2 lbs top round beef, cut in 1/2-inch cubes
4 large potatoes, peeled and thinly sliced
2 cups chopped tomatoes
2 carrots, grated
1/4 cup chopped celery
1 cup chopped onion
1 green bell pepper, julienned
2 garlic cloves, minced
3 tablespoons chopped parsley
2 1/2 teaspoons salt
1/2 teaspoon black pepper
2 cups chicken broth

Steps:

  • Preheat oven to 375°F.
  • Heat 3 tablespoons oil in a large skillet.
  • Add meat and brown on all sides. Remove and set aside.
  • Place potatoes in a greased baking dish large enough to hold all ingredients.

2 cups water
