Time 1h20m

Yield 6 servings

Number Of Ingredients 14

1 tablespoon olive oil, plus more for greasing
1 large yellow onion, diced
3 cloves garlic, minced
2 tablespoons tomato paste
1 cup panko breadcrumbs
1 cup whole milk
2 lb ground beef
2 large eggs, beaten
½ cup fresh parsley, roughly chopped
1 tablespoon worcestershire sauce
½ teaspoon dried thyme
1 tablespoon kosher salt
1 teaspoon freshly ground black pepper
½ cup ketchup

Steps:

  • Preheat the oven to 350°F (180°C). Line a rimmed baking sheet with foil.
  • Heat the olive oil in a large pan over medium-high heat. Once the oil begins to shimmer, add the onion and cook, stirring often, until softened and golden brown, about 7 minutes. Add the garlic and cook, stirring constantly, until aromatic, about 1 minute. Add the tomato paste and cook, stirring often, until the tomato paste turns deep red in color, about 2 minutes. Tips:

  • To avoid a dry meatloaf, use a combination of ground beef and ground pork. The pork adds moisture and flavor.
  • Soak the bread crumbs in milk before adding them to the meat mixture. This will help to bind the ingredients together and prevent the meatloaf from becoming dry.
  • Season the meatloaf generously with salt, pepper, and garlic powder. You can also add other herbs and spices to your taste.
  • Form the meatloaf mixture into a loaf shape and place it in a baking pan. Bake the meatloaf at 350 degrees Fahrenheit for about 1 hour, or until a meat thermometer inserted into the center of the loaf reads 160 degrees Fahrenheit.
  • While the meatloaf is baking, make the Alfredo sauce. To make the sauce, melt butter in a saucepan and whisk in flour. Gradually whisk in milk and heavy cream. Bring the sauce to a simmer and cook until it has thickened. Stir in Parmesan cheese and season with salt and pepper to taste.
  • Once the meatloaf is cooked, remove it from the oven and let it rest for 10 minutes before slicing and serving. Serve the meatloaf with the Alfredo sauce on top.

Conclusion:

Alfredo meatloaf is a delicious and easy-to-make dish that is perfect for a weeknight meal. The combination of ground beef and ground pork makes the meatloaf moist and flavorful, while the Alfredo sauce adds a creamy and cheesy flavor. This dish is sure to be a hit with the whole family.
