While looking for something a little different, I concocted this from a number of different sources and it was well received at potlucks. You can substitute egg substitute and reduce milk a little and it works well. Baking time may vary

8 slices of fresh bread, cubed
1 -1 1/2 lb pork sausage (or sausage/bacon combination)
2 cups cheddar cheese, grated
1 (4 ounce) can sliced mushrooms
3/4 teaspoon dry mustard
1 (10 ounce) can cream of mushroom soup
1/2 medium green pepper (chopped)
1/2 medium red pepper (chopped)
1/4 cup black olives (chopped)
2 1/2 cups milk
8 extra large eggs

Steps:

  • Trim crust from bread and cut in 2 inch cubes Spray 9 X 13 Casserole dish with nonstick spray and put cubed bread in the dish Brown and drain sausage Add chopped peppers and olives and stir into mixture (heat through only) Combine beaten eggs, dry mustard, and 2 cups of milk in a bowl.
  • Layer sausage mixture on top of bread Layer Cheese on top of sausage mixture Layer Sliced Mushrooms on top of Cheese Pour egg mixture into dish, cover and refrigerate overnight When ready to bake, combine soup and 1/2 cup milk and pour over top of dish Bake in preheated 350 degree oven for 1 1/2 to 2 hours.
  • (Check to make sure egg mixture is cooked in the middle of the dish).
  • I forgot to add the eggs. Use 8 large eggs. Mix and pour over the layered mixture. Egg substitute works well by reducing the milk by 1/2 cup ..

1 tablespoon butter
1 pound ground beef
¾ teaspoon ground black pepper
½ teaspoon onion powder
½ teaspoon salt
1 (10.75 ounce) can condensed cream of mushroom soup
½ cup sour cream
12 saltine crackers
1 (10 ounce) box frozen chopped spinach, thawed and squeezed dry
1 (4 ounce) package sliced button mushrooms, or more to taste
4 slices Muenster cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Rub butter all over a 2-quart baking dish.
  • Heat a large skillet over medium heat. Add ground beef, pepper, onion powder, and salt; cook and stir until browned, 5 to 8 minutes.
  • Mix cream of mushroom soup and sour cream together in a bowl.
  • Lay 6 saltine crackers in the bottom of the prepared baking dish. Top with 1/2 the ground beef. Dollop 1/3 of the mushroom soup mixture over beef. Lay remaining saltines on top. Cover with spinach and another 1/3 of the mushroom soup mixture. Spread remaining ground beef and mushroom soup mixture on top. Cover with mushrooms.
  • Bake in the preheated oven until bubbly, about 30 minutes. Top with Muenster cheese and continue baking until cheese is melted, about 5 minutes more.

5 eggs

pepper
2 1/2 cups bacon (chopped, you can use both) or 2 1/2 cups sausage (chopped, you can use both)
1 (8 ounce) package prepared stuffing (what ever flavor you want)
1 (8 ounce) package hash brown potatoes
2 cups cheese, shredded

Steps:

  • Mix up eggs; add a dash of salt and pepper.
  • Cook bacon/sausage; drain.
  • Get out a baking dish.
  • Put stuffing mix on the bottom of the dish.
  • Add the hash browns.
  • Add eggs.
  • Add cooked bacon/sausage.
  • Top with cheese.
  • (You can let this sit overnight if you want).
  • Bake at 350 degrees Fahrenheit for 45 to 50 minutes or until set.
