Steps:
- Preheat the broiler. Spread the almonds on a rimmed baking sheet and broil, stirring frequently, until golden, 2 to 3 minutes. Combine the toasted almonds, 2 tablespoons olive oil, the lemon juice, honey, mustard, 1/4 cup water, 1/4 teaspoon salt, and pepper to taste in a blender and blend until smooth. Transfer to a bowl and stir in the parsley.
- Toss the asparagus with the remaining 1 tablespoon olive oil, 1 tablespoon water, the lemon zest, and salt and pepper to taste on the same baking sheet. Spread in a single layer and broil until the asparagus is bright green and crisp-tender, about 4 minutes. Transfer to a plate and keep warm.
- Sprinkle the fish with 1/4 teaspoon each salt and pepper and arrange on the same baking sheet, rounded side down; broil until opaque, about 3 minutes. Turn the fillets, brush with some of the almond sauce and continue broiling until just firm and cooked through, 3 to 5 more minutes. Divide the fish and asparagus among plates and top with the remaining almond sauce.

CILANTRO CRUSTED MAHI MAHI
I have never been a huge fan of fish, but this is a mild, simple and delicious tasting entree! I like to make it with tilapia as well. You could probably use any mild tasting white fish. I have also used dried cilantro when my store was out of fresh.

Steps:
- Heat olive oil in a large oven proof skillet over medium high heat.
- Preheat oven to 375 degrees.
- Season both sides of fish with salt and pepper.
- Dredge only one side of each fillet in the cilantro.
- Place fish, cilantro side down, into the hot olive oil, being careful not to crowd the pan.
- Cook until cilantro is crisp, checking often not to burn. (I check after 1 minute, then every 30 seconds after that.).
- Turn fish over, then place in preheated oven.
- Bake for 3-5 minutes, or until fish flakes easily with a fork.
- If you do not have a large oven proof skillet, you can cook fish a couple of fillets at a time, then transfer to a baking dish to finish cooking. You can use less oil or nonstick spray if using a nonstick pan, just remember to add more before adding more fish. Add extra cooking time since the dish is not preheated.

ALMOND AND HERB ENCRUSTED MAHI MAHI
Steps:
- Rinse off Mahi Mahi and pat dry with paper towels. Drizzle extra virgin olive oil and rub to cover the fish. Combine all dry ingredients together in a shallow bowl and mix. Then take the Mahi filet and press into the mixture to coat on each side. Place under the broiler until the crust is golden brown and the fish is flaky. Serve with a heavier side like roasted potatoes and asparagus.
Tips:
- Choose fresh mahi-mahi: Look for fish with bright, clear eyes, firm flesh, and a mild, sweet smell.
- Use a variety of herbs: This recipe calls for a combination of basil, thyme, and parsley, but you can use any herbs you like. Some other good options include oregano, rosemary, and sage.
- Don't overcook the fish: Mahi-mahi is a delicate fish, so it's important to cook it quickly over high heat. The fish is cooked through when it flakes easily with a fork.
- Serve immediately: Mahi-mahi is best served immediately after it's cooked. The fish will start to dry out if it sits for too long.
Conclusion:
This almond and herb-encrusted mahi-mahi is a delicious and easy-to-make recipe that's perfect for a weeknight dinner. The fish is flaky and flavorful, and the almond and herb crust adds a nice crunchy texture. Serve with your favorite sides, such as roasted vegetables, mashed potatoes, or rice.
