This is a New Year's Eve tradition for my husband and I. It's an absolutely delicious new twist to the traditional peanut butter cookies, though they look almost exactly the same.

Yield 48-60 cookies

Number Of Ingredients 15

1/2 cup butter, softened
1/2 cup almond butter
1/2 cup granulated sugar
1/2 cup packed brown sugar
3/4 teaspoon baking soda
1/2 teaspoon cream of tartar
1/4 teaspoon salt
1 egg
2 tablespoons milk
1/2 teaspoon vanilla
1 cup whole wheat flour
1 cup all-purpose flour
3 tablespoons granulated sugar
2 tablespoons finely ground almonds
48 to 60 milk chocolate kisses with almonds

Steps:

  • In a large mixing bowl, beat butter and almond butter with electric mixer on medium to high speed for 30 seconds. Add 1/2 cup granulated sugar, brown sugar, baking soda, cream of tartar and salt. Beat until combined, scraping bowl occasionally. Beat in egg, milk and vanilla until combined. eat in whole wheat flour and as much of the all-purpose flour as you can with the mixer. Stir in any remaining flour. Combine 3 tablespoons sugar and ground almonds. Shape dough in 1" balls. Roll balls in sugar mixture to coat. Place balls 2" apart on ungreased cookie sheets. Bake for 8-10 minutes or until edges are firm and tops are cracked. Remove from oven; immediately press a chocolate kiss in the center of each cookie. Transfer to wire rack. Cool.

Tips:

1. Use High-Quality Almond Butter: Opt for natural, unsweetened almond butter with a smooth and creamy texture for the best results. 2. Chill the Dough: Refrigerating the dough before shaping and baking helps prevent spreading and ensures perfectly round blossoms. 3. Shape the Dough Evenly: Roll the dough into small, uniform balls to ensure even cooking and a consistent shape. 4. Use a Cookie Scoop: A small cookie scoop can help you create evenly sized dough balls and speed up the shaping process. 5. Press the Dough Balls Flat: Flatten the dough balls slightly before placing them on the baking sheet to create a more even surface for the filling. 6. Don't Overfill the Dough: Overfilling the dough with the almond butter filling can lead to messy, misshapen blossoms. Use just enough filling to create a small indentation in the center of each dough ball. 7. Bake Until Golden Brown: Bake the blossoms until the edges are golden brown and the centers are set. Overbaking can dry out the cookies. 8. Let the Blossoms Cool: Allow the blossoms to cool completely before filling them with powdered sugar. This prevents the sugar from melting and becoming absorbed into the cookies. 9. Use a Fine-Mesh Sieve: Dust the blossoms with powdered sugar using a fine-mesh sieve for a light and even coating. 10. Store the Blossoms Properly: Store the almond butter blossoms in an airtight container at room temperature for up to 3 days, or in the freezer for up to 2 months.
