1 ¼ cups white sugar
8 ounces ground almonds
2 ¼ cups confectioners' sugar
1 pound milk chocolate, broken into pieces

Steps:

  • Preheat oven to 250 degrees F (120 degrees C). Line 4 baking sheets with parchment paper.
  • Beat egg whites in a glass or metal bowl until foamy and soft peaks form. Gradually add white sugar, continuing to beat until mixture holds stiff peaks, about 5 minutes. Lift your beater or whisk straight up: the egg whites will form sharp peaks.

4 large egg whites
1/2 teaspoon coconut extract
1/4 teaspoon almond extract
1/4 teaspoon vanilla extract
1/4 teaspoon cream of tartar
1/8 teaspoon salt
1 cup sugar
1/4 cup plus 1 tablespoon baking cocoa, divided

Steps:

  • Place egg whites in a large bowl; let stand at room temperature for 30 minutes. Add the extracts, cream of tartar and salt; beat on medium speed until soft peaks form. Gradually beat in sugar, 1 tablespoon at a time, on high until stiff peaks form and sugar is dissolved. , Fold in 1/4 cup cocoa. Place mixture in a pastry bag; cut a small hole in the corner of bag. 4 large egg whites
1/2 teaspoon cream of tartar
1/2 teaspoon almond extract
3/4 cup confectioners' sugar
1/2 cup sugar
1/3 cup ground almonds
1/4 cup finely chopped almonds

Steps:

  • In a small bowl, beat the egg whites, cream of tartar and extract on medium speed until soft peaks form. Combine confectioner's sugar and sugar. Gradually add to egg white mixture, 1 tablespoon at a time, beating on high until stiff glossy peaks form and sugar is dissolved. 1 teaspoon grated lemon zest
¾ teaspoon ground cinnamon

  • Preheat the oven to 325 degrees F (165 degrees C). Grease and lightly flour cookie sheets.

1/2 teaspoon cream of tartar
1 teaspoon almond extract
3/4 cup Splenda sugar substitute (or use real sugar if you dare)
1/3 cup blanched almond, chopped

  • Prehat oven to 250 degrees F.
  • Line a cookie sheet (or two) with parchment paper or aluminum foil.
  • Place egg whites in a totally grease free bowl and beat until frothy (medium speed) Add cream of tartar, beat at high speed until soft peaks form.
