2/3 cup confectioners' sugar
1/4 cup 2% milk
1 teaspoon vanilla extract
3 cups all-purpose flour
1 package (7 ounces) almond paste
VANILLA ICING:
1 cup confectioners' sugar
4-1/2 teaspoons 2% milk
1 teaspoon vanilla extract
CHOCOLATE ICING:
1 cup confectioners' sugar
1 ounce unsweetened chocolate, melted and cooled
3 tablespoons 2% milk
1 teaspoon vanilla extract
Assorted sprinkles

Steps:

  • Preheat oven to 375°. In a large bowl, cream butter and confectioners' sugar until light and fluffy. Beat in milk and vanilla. Gradually beat in flour., Cut almond paste into 12 slices (about 1/4 in. thick); cut each into quarters. Shape into balls. Wrap tablespoons of cookie dough around almond paste to cover completely. Place 2 in. apart on ungreased baking sheets., Bake 10-12 minutes or until golden brown. Remove to wire racks to cool completely., In a small bowl, mix vanilla icing ingredients until smooth. For chocolate icing, mix confectioners' sugar, cooled chocolate, milk and vanilla until smooth. Dip cookies in icings as desired; allow excess to drip off. Decorate with sprinkles. 1 12-oz package vanilla wafers
~ 2 cups confectioners sugar
3 tablespoons unsweetened cocoa powder
1/4 cup dark rum
3 T. brown sugar
1 can almond filling (e.g. Love'n'Bake Almond Schmear)
1 cup chocolate chips or other semi-sweet chocolate for melting
1/8 c. butter
sea salt

Steps:

  • Line 2 baking sheets with waxed paper and set aside. Place vanilla wafers in heavy-duty plastic bag and crush with rolling pin to make fine crumbs, or place wafers in food processor and process until fine. You should have about 3 cups of crumbs. Place wafer crumbs in large bowl. Add 1 cup confectioners sugar and cocoa powder. Stir until blended. Add almond filling, rum, and brown sugar; mix to combine. Dust hands with confectioners sugar. Shape mixture into small balls. Freeze for at least an hour. Melt chocolate and butter together until smooth. Dip rum balls into chocolate. When the chocolate begins to set (after a minute or so -- before it has set completely), sprinkle with sea salt. Let cool completely. Store in the freezer.

I've had this recipe for years and don't really know where I got it. I've only ever made these during the Christmas season. I store them in an old clear glass, clasp-lid mason jar with gold glittered decorations and a pretty ribbon. Cooking time is standing time. Rum or Brandy can be substituted for the whiskey. For those of you in the UK, you can substitute digestive bisquits for the wafers and also sub golden syrup for the corn syrup.

1 (12 ounce) box vanilla wafer cookies
1 cup powdered sugar
3 tablespoons cocoa powder
1 cup walnuts, finely chopped
3 tablespoons light corn syrup
1/2 cup whiskey
1/2 cup powdered sugar (for rolling)

Steps:

  • Put cookies into a large ziplock bag and crush with a rolling pin or put into a food processor until you have very fine crumbs.

1 cup margarine, softened
2 pounds confectioners' sugar, sifted
1 (14 ounce) can sweetened condensed milk
3 cups coconut
1 cup finely chopped walnuts
1 teaspoon vanilla extract
1 (12 ounce) package semisweet chocolate chips
2 tablespoons shortening

Steps:

  • In large bowl, combine margarine, confectioners' sugar, condensed milk, coconut, chopped walnuts and vanilla. Stir well. Cover and chill in the refrigerator for 2 hours, or until mixture has thickened enough to roll into balls. 1/2 cup/113 grams unsalted butter, at room temperature
1/2 cup/106 grams packed light brown sugar
2 large eggs, at room temperature
1/2 teaspoon almond extract
3 tablespoons all-purpose flour
1/2 teaspoon kosher salt
1/3 cup/67 grams granulated sugar
2 tablespoons dark rum
8 stale croissants, halved horizontally
1/2 cup/43 grams sliced almonds

Steps:

  • Make the frangipane: Place the almond flour in a medium skillet and set over medium heat. Cook, stirring frequently, until golden brown and toasty smelling, 5 to 8 minutes. Remove from heat and set aside to cool.
