6 large sweet potatoes
3 tablespoons packed light-brown sugar
3 tablespoons packed dark-brown sugar
2 large eggs, beaten
1/4 cup freshly squeezed orange juice
2 tablespoons unsalted butter, melted
1 teaspoon pure vanilla extract
1/2 teaspoon coarse salt
3 tablespoons unsalted butter, slightly softened
1/4 cup packed light-brown sugar
1/4 cup packed dark-brown sugar
3/4 cup chopped pecans

Steps:

  • Preheat oven to 375 degrees.
  • Make the sweet potatoes: Place sweet potatoes on a baking sheet and roast until very tender, about 1 hour and 20 minutes. Remove from oven and let cool slightly. Reduce oven temperature to 350 degrees.
  • When potatoes are cool enough to handle, cut in half, scoop flesh into a bowl and mash until smooth. You should have 4 to 5 cups of mashed sweet potato. Stir in brown sugars, eggs, orange juice, butter, vanilla, and salt; transfer to an 8-inch square baking dish.
  • Make the topping: In a small bowl, mix together butter, brown sugar, and pecans. Sprinkle over sweet potato mixture. Transfer to oven and bake until nuts are toasted and casserole has puffed, about 30 minutes. Serve.

2 1/2 pounds sweet potatoes (about 3)
1 orange, zested and juiced
1 teaspoon ground cinnamon
1 tablespoon honey
1/2 cup milk
1/2 cup diced dried apricots
1/2 cup oatmeal
1/4 cup firmly packed brown sugar
2 tablespoons extra-virgin olive oil
2 tablespoons butter, cut into pea-sized pieces
1/2 cup chopped walnuts

Steps:

  • Preheat the oven to 375 degrees F.
  • Put the sweet potatoes on a sheet tray and roast for 35 to 40 minutes. The sweet potatoes might still be a little hard in the center- no problem!
  • While the sweet potatoes are baking make the topping. In a food processor, combine the oatmeal, brown sugar, olive oil, butter, and walnuts and pulse until mixture comes together.
  • When the potatoes are cool enough to handle, peel them and cut them into 1-inch chunks. Discard the skins. Put the potatoes into a large dish and add the remaining ingredients. Mash together with a potato masher until well combined.
  • Transfer the mixture to a 2-quart casserole dish. Crumble the topping mixture over the potatoes. Bake until the mixture hot all the way through and the topping is brown and crispy, about 30 minutes.
  • That's a hot sweet potato!

FILLING:
1/2 cup sugar
1/2 cup 2% milk
2 large eggs, lightly beaten
1/4 cup butter
1 teaspoon vanilla extract
2 cups miniature marshmallows

Steps:

  • Preheat oven to 350°. Place sweet potatoes in a 6-qt. stockpot; add water to cover. Bring to a boil. Reduce heat; cook, uncovered, until tender, 10-12 minutes. Meanwhile, make topping by combining flour, brown sugar, oats and salt; cut in butter until crumbly. , Drain potatoes; return to pan. Beat until mashed. Add sugar, milk, eggs, butter and vanilla; mash. Transfer to a broiler-safe 13x9-in. baking dish. 2 large sweet potatoes or yams, or 3 medium
10 pitted prunes
1 cup port, Madeira, Marsala, or bourbon
Salt and pepper

Steps:

  • Preheat oven to 450 degrees F. Melt butter in a small saucepan over medium heat. Meanwhile, slice the sweet potatoes on a mandoline. Soak prunes in port for 20 minutes, then drain and roughly chop. Coat a cast-iron skillet with butter, then arrange half of the potatoes in an overlapping circle until the bottom of the skillet is covered. Brush the top generously with melted butter, and sprinkle with salt and pepper. Scatter half of the prunes over the sweet potatoes, then repeat the whole process. 2 tablespoons butter
2 large eggs
¼ cup maple syrup
¼ cup buttermilk
⅓ cup milk
½ teaspoon vanilla extract
½ teaspoon salt
1 pinch ground allspice
1 pinch cayenne pepper
½ cup chopped roasted, salted pistachios
½ cup light brown sugar
⅓ cup all-purpose flour
¼ cup butter, melted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 2 1/2-quart baking dish with butter.
  • Place sweet potato cubes into a large pot, cover with water, and add a large pinch of salt. Bring to a boil and cook until a knife is easily inserted into a sweet potato cube, about 10 minutes. Drain well. Return to the pot and mash 2 tablespoons butter into sweet potatoes.

5 pounds sweet potatoes (about 10 medium or 5 large), scrubbed
1/3 to 1/2 cup maple syrup
3/4 cup sour cream or crème fraîche
4 teaspoons purée from canned chipotles
1 1/2 teaspoons ground cinnamon

Steps:

  • Put oven rack in middle position and heat oven to 375 degrees. Place potatoes on large baking sheet and bake until soft, 35 to 40 minutes for medium potatoes, up to 1 hour for large.
