- Set a large pot of water on to boil for the dumplings.
- De-fat, and tenderize chicken. Cut into bite-sized pieces. With oil, brown chicken in a large pan on medium-high heat (6-10 min).
- Add paprika, onion powder, salt, pepper, and chicken broth to the chicken in the pan. Stir them to mix. Bring to a boil and then lower heat to simmer and put a lid on and let simmer for 25 minute.
- In a container with a lid (tupperware is good) mix water, flour and sour cream for the chicken. Shaking the mixture aggressively is the best way to ensure a smooth mix. Set aside mixture for later.
- While chicken is simmering, mix all ingredients - eggs, flour, water, and salt - for the dumplings together in a mixing bowl. It should be a pretty thick, dry mix when you are done. If it's too gooey, add small amounts of flour until it is more dry.
- With water boiling, turn down the heat to low. Tip the mixing bowl until the dumpling dough rests at the edge. Using a dull knife (butter knife), slice the dough from the lip of the bowl into small blobs and into the pot. Continue this process until all of the dough has been used. This process takes about 3-5 minute Dipping the knife occasionally into the boiling water will prevent dough from sticking to it.
- Raise heat and boil dumplings for another 5-6 min or so.
- Meanwhile, the chicken should be about done simmering. Using a spoon, draw some of the chicken sauce and put it into the sour cream/flour/water mixture that you had set aside. This is important to prevent sour cream from curdling. Put the lid on and shake the mixture once more. There should be no flour or sour cream chunks in the mixture.
- Finally, stir the mixture into the chicken pan. Mix until consistent. Bring the sauce to a boil stirring occasionally for sauce to thicken.
- Drain the water from the dumplings.
- Usually, chicken and sauce are served on top of the dumplings.

- Whisk together the rice vinegar, sesame oil, 3 green onions, garlic, sugar, ginger, soy sauce, vegetable oil, coriander, and mustard in a mixing bowl until the sugar has dissolved. - Place the chicken breasts and barbecue sauce in a gallon-sized zip top bag and allow to marinate for 30 minutes in the refrigerator.
- Melt 1 tablespoon of butter in a large skillet placed over high heat, and add the chicken. Cook the chicken until it is browned and almost cooked through, about 5 minutes per side. Remove chicken from skillet, chop into 1 inch pieces, and place in the crock of a slow cooker.

We were trying to use ingredients that would not only taste great for kids and adults alike but also follow a gluten free casein free diet for her son with Autism. When she served this for dinner to her husband, who is very picky, he exclaimed, "Wow,Amazing! You have to make this for Christmas dinner. The entire chicken disappeared very quickly and he was disappointed that she had not made two!

Steps:
- Wash the chicken in cold water, and clean the inside cavity out too. Then pat dry and rub with 1 tsp of salt. Then move chicken to greased baking dish/roasting pan.
- In a skillet, heat 1 tbsp oil over medium heat. Add the uncooked rice, cinnamon, orange peel, 1 tsp salt and pepper. Stir fry for 2 minutes.
- Add chicken stock, cover and simmer over low heat for 20 minutes. Please make sure your to cover the rice, it needs to be cooked prior to stuffing into the chicken.
- Preheat oven to 400 degrees.
- Add the raisins, orange cranberries, lemon juice and chopped apples. Mix together and then remove from heat.
- Stuff the chicken with the rice stuffing mixture. Preferred method: Melt 2 tbsp butter and pour over stuffed chicken. Rub melted butter over all areas of the chicken. (If making the casein free version use margarine instead of the butter.).
- Cover with foil or baking lid. Roast for 1 1/2 hours till tender.

- In large stock pot, cook the diced sweet potato in the vegetable stock over medium-high heat for approximately 10-15 minutes.
- Add the chicken stock and bay leaf, reduce heat to medium-low and allow to simmer.
- While that's simmering, cook your bacon in a large skillet until it is crisp.
- Remove the bacon and let drain on paper towels.
- (If you aren't planning to use bacon, this is where you would heat your olive oil).
- Add cubed chicken to the bacon drippings (or oil) and cook (over medium heat) until just starting to turn white, stirring frequently.
- Crush the basil and thyme and add to chicken, stirring to mix together well.
- Add the Worcestershire sauce and let it all cook for about 10 minutes to blend the flavors, stirring every so often.
- Remove the chicken with a slotted spoon and add to the simmering stock.
- In same skillet put your onion, carrots, and garlic and sauté for about 10 or 15 minutes, stirring occasionally (you just want them slightly tender, not mushy).
- Use a slotted spoon to remove the veggies and add them to your simmering stock.
- Cover and simmer for approximately 1 hour or until the veggies are the consistency you like.
- If not thick enough for you after the hour, mix the cornstarch and water into a "slurry" and add slowly to the stock, stirring constantly, until thickened.
- Slowly stir in the cream and allow to warm through.
- If you used it, crumble the cooked bacon over top.
- Serve with warm rolls.
AMAZING CHICKEN N' DUMPLINGS
Chicken n' dumplings is always my first choice for a hot meal on a cool day. But I never found one with much flavor to it. I messed around with a few recipes and I think I finally got an amazing chicken n' dumplings recipe! The spices make your home smell so good while its cooking away in your slow cooker. This is one of the meals my 5 year old asks for seconds on. Enjoy!

- Heat 1 tbls oil in sautee pan. Put 1/2 c flour, salt and pepper into a ziploc bag. Cut chicken into pieces and dump into bag. Coat chicken in flour and brown in heated pan, browning on all sides. Do not wash your pan yet!
- Place carrots, peppers and onions in the bottom of your slow cooker and place the chicken on top of the vegetables. Add water and bouillon cubes. Add spices and let it cook. Melt 2 tbls butter in your used pan and add flour to make it slightly thick. Scrape all of the goodness from when you cooked the chicken so you get all of the extra flavor. Add the roud to the soup. Cook on low 6-8 hours or high 4-5 hours. About 30 min before serving, flatten out the refrigerated biscuits and cut into small squares. Put all of the dumplings into the soup and replace the lid.
- This recipe makes for great leftovers too!
