NEW POTATOES, GREEN BEANS AND HAM

New Potatoes, Green Beans and Ham image

This recipe was given to me by my Mother-in-law who raised 9 children and taught school for 40 years and didn't have much time to cook. It remains a family favorite with my children. Last night I had no broth, so I mixed Lipton's Garlic and Herb soup (1 packet) and 4 cups of water and it was wonderful, really added richness to the broth.

Categories     Ham

Time 8h15m

Yield 6-8 serving(s)

Number Of Ingredients 6

8 red potatoes, scrubbed and halved
1 (16 ounce) package frozen green beans (or fresh)
1 large onion, cut into about eight wedges
2 cups ham, cut into bite sized pieces
vegetable broth or chicken broth
salt and pepper

Steps:

  • I cook this in a crockpot all day, but may be cooked in a dutch oven on the stove, also.
  • Add all the ingredients and cover, cook on low for 8 to 10 hours.
  • If cooking on the stove you may need more broth, but the crockpot makes broth as it cooks, so you shouldn't need any more.
  • Use your own judgement on the amount of broth.
  • Serve with fresh, sliced tomatoes and corn bread for a great Southern meal.

CRAZY-SIMPLE COTTAGE HAM, POTATOES, AND GREEN BEANS

Crazy-Simple Cottage Ham, Potatoes, and Green Beans image

Cottage ham is one of my favorite dishes to eat because it's rich in flavor and incredibly simple to make. Requiring only five ingredients and five minutes of prep time, this dish could quickly become a go-to meal in your household. If you can't wait the hour it takes to cook, drop it in a slow cooker in the morning, and it'll be ready when you get home.

I make this dish often; I have never really measured the ingredients, but can give you a reasonable approximation. Note: Freeze leftover cooking liquid, and then add to bean soup, ham or cabbage dishes, or use to cook dumplings in. It's delicious!

SOUTHERN GREEN BEANS, HAM & POTATOES

Southern Green Beans, Ham & Potatoes image

I love homemade ham & green beans with potatoes, served with a skillet of cornbread and sweet tea! For this recipe, I took two "soul-food" recipes I had and combined them to come up with this one. It's just the way I like it. You can adjust the amounts of ingredients to your own taste. If I use ham hocks, I usually only add one or two slices of bacon for added flavor, just because I like bacon flavor. But if I don't have ham hocks, I use 4- 6 slices of bacon.

Tips for Cooking Ham, Green Beans, and New Potatoes:

  • Choose the right ham: For this recipe, a bone-in ham is best because it adds more flavor to the dish. You can use either a fresh or a smoked ham, depending on your preference.
  • Cook the ham properly: To ensure that the ham is cooked thoroughly, use a meat thermometer to check the internal temperature. The ham should be cooked to an internal temperature of 140 degrees Fahrenheit.
  • Use fresh green beans: Fresh green beans are best for this recipe because they have a crisp texture and a slightly sweet flavor. If you are using frozen green beans, be sure to thaw them before cooking.
  • Cook the green beans until they are tender-crisp: Green beans should be cooked until they are tender but still have a slightly crunchy texture. Overcooked green beans will be mushy.
  • Use small new potatoes: Small new potatoes are best for this recipe because they cook quickly and evenly. You can use either red or white new potatoes.
  • Cook the potatoes until they are tender: New potatoes should be cooked until they are tender but still hold their shape. Overcooked potatoes will be mushy.
  • Season the dish to taste: Season the dish with salt, pepper, and other herbs and spices to taste. You can also add a splash of lemon juice or vinegar for a bit of acidity.

Conclusion:

This recipe for ham, green beans, and new potatoes is a classic dish that is perfect for any occasion. It is easy to make and can be tailored to your own taste preferences. With a few simple tips, you can make this dish a hit at your next gathering.
