3 tablespoons butter
1 medium yellow onion, chopped
1 green bell pepper, stemmed, seeded, and chopped
2 garlic cloves, minced
1 pound ground beef
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon ground black pepper
Kosher salt
1 (14.5-ounce) can diced tomatoes
1 (14.5-ounce) can tomato sauce
1/4 cup tomato paste
2/3 cup tomato juice
Pinch of sugar
1 pound elbow macaroni

Steps:

  • 1. Heat the butter in a large pot over medium heat. Add the onion and bell pepper and cook, stirring occasionally, until soft, about 5 minutes. Add the garlic and cook, stirring, for about 1 minute. Then add the ground beef and continue to cook, stirring and breaking up the chunks of meat with a spoon. Cook until the meat is no longer pink, about 7 minutes. Sprinkle the herbs and pepper over the meat, add salt to taste, and mix in well.
  • 2. Add the canned tomatoes with their juices, the tomato sauce, paste, and juice. Add sugar to taste. Simmer while you cook the pasta.
  • 3. Bring a large pot of salted water to a boil over high heat. Add the macaroni and cook, stirring occasionally, until al dente. Drain. Mix the macaroni into the chop suey. Serve hot.

1 (16 ounce) package uncooked elbow macaroni
1 pound lean ground beef
1 onion, chopped
2 (10.75 ounce) cans condensed tomato soup
salt and pepper to taste

Steps:

  • Cook macaroni according to package directions.
  • Meanwhile, in a separate large skillet over medium high heat, saute the ground beef and the onion for 5 to 10 minutes, or until meat is browned and crumbly. Drain thoroughly and leave the meat and onion in the skillet. Pour the two cans of tomato soup into the skillet and stir well to combine.
  • When noodles are done, drain thoroughly and return noodles to the pot. Add the hamburger mixture from the skillet to the pot. Mix well and season with salt and pepper to taste.

3 cups elbow macaroni
1 1/2 lbs ground beef
1 large green pepper
1 large onion
1 (14 ounce) can tomato soup

  • Boil elbow macaroni until just under cooked or al dente and drain.
  • Chop onion and green pepper.

A school lunchtime classic. Quick and easy to make. Very bland but has remarkable taste. My sister has tried it and say it's just as she remembers Mom's. All you need to finish this recipe is some Kraft shaker cheese to complete the memory. Mom probably got the recipe from a 1950 vintage Betty Crocker cookbook. Quantities are approximate. Mom seldom measured anything. We usually make a double batch. Enjoy. If you add a bit of garlic powder, chili powder and a can of kidney beans you would create Mom's Chili Mac Recipe.

1 -1 1/2 lb ground beef
1 small yellow onion
1/2 cup green bell pepper
1/2 cup celery

1 -1 1/2 tablespoon Worcestershire sauce (mom probably used A1)

1 Tbsp minced garlic from a jar, in olive oil
1 28 oz can crushed tomatoes w/ italian seasonings
1 lb lean ground beef, i used ground turkey breast
salt and pepper to taste
hot sauce to taste
2 c elbow macaroni, i used ronzoni healthy harvest
1 Tbsp canola oil

  • 1. Heat oil in lg skillet over medium heat. Add onions, peppers and garlic. Saute for about 5 mins. Add beef or ground turkey. Cook until browned.
  • 2. Place all ingredients in lg pot. Add tomatoes. Cover, simmer over med-low. Cook pasta as directed, but only until almost done. Drain. Add pasta to pot. Simmer 1/2 hr. Season w/ salt, pepper and hot sauce.

First off, let me say....it's bland. That's the way they cooked way back when!!!! Or maybe my mom did cause my dad was a meat & potato man, nothing spicy for him. I spice our's up by adding stuff!! I'm just giving you her recipe for some real comfort food. Four of us kids(oldest being 71 and youngest being 55) still make this. You have to add what you like to it. I can't change her recipe. Too many memories go along with this recipe.

1 (1 lb) box elbow macaroni, cooked according to package
1 lb hamburger
1 small onion, chopped
2 cloves garlic, minced
1 -2 teaspoon dried oregano

  • Cook Elbows according to package directions.
  • Drain and set aside.
  • In a large skillet, brown the hamburg, onion and garlic together until the hamburg is done.

1/3 c olive oil
1 can(s) hunt's 4 cheese tomato sauce
2 can(s) stew or diced tomatoes
1 lb macaroni, elbow
1 c mozzarella cheese, shredded
1 c chedder cheese, shredded
1 Tbsp garlic powder
1 medium onion, chopped into small pieces
1 tsp salt and pepper
1 tsp italian seasoning
1/2 tsp parsely

Steps:

  • 1. In a large skillet, add the olive oil and ground beef. Add the spices to the meat and cook until browned all over.
  • 2. While the meat is cooking put a pot of water up to boil for the macaroni. Pasta should be firm when chewed not soggy. Test a piece often for readiness.
  • 3. Drain the pasta once done and put it back into the pot. Add the meat that is already cooked. Stir. Now Add the tomato sauce and stewed or diced tomatoes. Stir well. Heat should be at medium. When the sauce starts to bubble add the chedder cheese and mozzarella cheese and stir. Simmer for about 15 minutes, stirring several times. Once the cheese is well combined remove from heat and serve.

8 ounces ground beef
1 large onion, sliced
1 cup celery, strips
2 tablespoons salad oil
2 1/2 cups bean sprouts
1 (10 1/2 ounce) can condensed consomme (undiluted)
1 tablespoon cornstarch
1/4 cup soy sauce

Steps:

  • Drain mushrooms and reserve about 1/4 cup of juice.

1 can(s) stewed tomatoes
1 can(s) diced tomatoes w/ green chilies
1 lb hamburg
1 box pasta, preferrably anything that is short

Steps:

  • 1. Brown the hamburg in a medium size sauce pan until it's about 3/4 of the way done (mostly brown with some pink) and drain the grease. Return beef back to the pan.
  • 2. Take the stewed tomatoes and mash them over the pan with your hand. Give them a really good squeeze and really separate the tomatoes into pieces and let the juice fall in. Do this with all of the stewed tomatoes. Pour the remaining juice from the can into the mix.
  • 3. Put the entire contents of the can of diced tomatoes and green chilies into the beef mixture.
  • 4. Let this sit on the stove on low. Meanwhile, boil your pasta until it is halfway cooked.
  • 5. Once the pasta is half-cooked, add it to the meat and cook on low until tender. The extra juices from the tomatoes will really help soften the pasta. **Depending on the type of pasta, I don't always use the entire box. The amount can be added per your individuality.**
  • 6. EARLIER PREP OPTION: Once the meat is browned, I put it in a crockpot (while it's off), with the cover on and let it sit until I'm ready to use it. The pasta, I toss it with cold water and olive oil and refrigerate until I'm ready for that. Then a 1/2 hour before we are going to eat, I put the crockpot on low and add the half-cooked pasta and let it all heat up together.

CENTRAL AMERICAN CHOP SUEY

This is a traditional christmas side dish in Honduras (usually served along side Nacatamales). You can also add shrimp to the dish but I usually will not do this if I am planning to serve for a large party as shrimp can go bad in 1-2 hrs and it will spoil the entire dish. I also use gloves when peeling the ayote because it has a sticky residue that leaves your hand peeling and very dry. I do not recommend buying the cabbage pre-shredded because when it comes time to stir fry, the cabbage is cut so thin that it burns very quickly. I rather shred with a knife. You can also completly omit the meat and make it vegiterian!

1 chayote (washed, peeled, cut in half and then julienned cut into matchstick size)

  • In a medium pot, add water and bring to a boil.

1 onion, chopped
1 can condensed tomato soup
1 can stewed tomatoes

1-1/2 lb ground beef
1 medium clove of garlic...minced
3 Tbsp a-1 steak sauce
1-1/2 c elbow macaroni
1 can(s) (16oz) tomatoes.... chopped
1/2 c water, with a little catsup added
1 c tomato juice
1 tsp salt
1/4 c shredded cheddar cheese......optional

Steps:

  • 1. In a skillet brown beef till crumbly. Drain meat. Return meat to skillet. Add onion and garlic, cook till onion is soft.
  • 2. Stir in the remaining ingredients, but not the cheese
  • 3. Put all in a crockpot on low, for about 30-40 minutes.. till macaroni is cooked....no peeking! Add more water if needed. Keep it thick, and not soupy!
  • 4. Top with cheese.. if desired. Serve and enjoy., this simple, easy recipe. Serves 6
