AMISH NEVER FAIL PIE CRUST

Amish Never Fail Pie Crust image

I've had this recipe for a long time. It's the only crust my wife asks for whether I'm making pot pies, fruit pies or turnovers. It makes awesome homemade Hot Pockets too. You can substitute whole wheat flour for all or some of the AP flour. This is enough for a 9 inch 2 crust pie, two 9 inch single crust pies or 10-12 hot pockets. You can double the recipe if you have a really big mixing bowl for OAMC.

Tips:

  • If the pastry dough is too dry, add a tablespoon of water at a time until it comes together.
  • Be sure to chill the dough for at least 30 minutes before rolling it out. This will make it easier to work with and less likely to stick.
  • When rolling out the dough, use a light touch and roll it out evenly. If you roll it out too thin, it will tear easily.
  • Be sure to trim the edges of the dough evenly before placing it in the pie plate. This will help to prevent the dough from shrinking and pulling away from the sides of the pie plate.
  • When filling the pie, be sure to leave about 1 inch of space around the edges of the dough. This will allow the filling to expand as it cooks.
  • If you are using a frozen pie crust, be sure to thaw it completely before using it. This will help to prevent the crust from cracking.
  • When baking the pie, be sure to preheat the oven to the correct temperature. This will help to ensure that the pie cooks evenly.
  • Keep an eye on the pie while it is baking. If the crust starts to brown too quickly, cover it with foil to prevent it from burning.

Conclusion:

Amish pot pie is a delicious and comforting dish that is perfect for a family meal. The flaky pastry dough and the creamy filling make this pie a real treat. With a few simple tips, you can make a delicious Amish pot pie that your family will love.
