My friends and family request this often...even those who don't like meatloaf! Sometimes I put minced carrot or rutabaga in for extra texture if I have some in the fridge. I serve it with mashed potatoes with the skins left on and corn. Comfort food at it's comfiest! Use 1 lb. ground turkey to make it a lighter dish, your family won't even know! I also use my stand up mixer to save on time and mess in the kitchen.

2 lbs ground beef
2 slices bread, cut into small pieces (do not use fresh bread)
1/4 cup ketchup
1/2 cup steak sauce, reserve 2-3 tbs for top of loaf
2 eggs
1/4 cup onion, diced

Steps:

  • Mix together all ingredients.
  • Place in loaf pan or use muffin tins for mini-meatloafs.

2 lbs lean ground beef
1/4 cup Egg Beaters egg substitute or 1 egg
1/2 cup wheat bran or 1/2 cup oat bran
3/4 cup oatmeal
1/2 cup ground flax seeds
1 small onion, minced
1 cup shredded cheddar cheese (optional)
1/2 cup ketchup
1/2 cup horseradish sauce
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon salt
1 teaspoon dried parsley
1 teaspoon dried thyme
1/2 cup brown sugar
1/4 cup Dijon mustard

Steps:

  • Preheat the oven to 350°.
  • Mix together all ingredients, except the brown sugar and mustard.

1/2 cup finely chopped scallions (white and green parts)
1/4 cup grated carrots
1/4 cup finely chopped onion
1 teaspoon dried thyme
1 teaspoon ground cumin
1/2 teaspoon sweet paprika
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 cup ketchup
2 teaspoons gelatin
2 pounds ground beef chuck
1/2 pound ground pork
2 large eggs, beaten
1/2 cup dried bread crumbs
Kosher salt and freshly ground black pepper
1/2 cup ketchup
1 teaspoon Worcestershire sauce
1/2 teaspoon dry mustard

Steps:

  • To make the meatloaf: Preheat the oven to 375 degrees F. In a small skillet, heat the oil over medium heat. Add the scallions, carrot and onion and cook until softened, about 10 minutes. Add the thyme, cumin, paprika, and garlic and onion powders. Cook until fragrant, about 1 minute. Scrape into a large bowl and let cool completely.

5 slices thick cut bacon
3 celery ribs, chopped
1 large onion, minced
1 tablespoon Worcestershire sauce
5 large button mushrooms, minced
2 teaspoons kosher salt
1 cup ketchup
1 1/2 cups shredded cheese (whichever kind is your favorite)
1 egg
3/4 cup breadcrumbs

Steps:

1 small onion, chopped

¾ cup ketchup

2 tablespoons prepared yellow mustard
½ cup brown sugar

Steps:

½ cup milk
1 egg

½ cup ketchup, divided
3 tablespoons brown sugar

  • Preheat oven to 350 degrees F (175 degrees C).
