Time 1h50m

Number Of Ingredients 10

8 Tablespoons Unsalted Butter ((softened))
2 Eggs ((lightly beaten))
1 Teaspoon Vanilla Extract
3 Bananas ((ripe & medium-sized bananas) - 3 medium bananas equal roughly 1 cup of mashed bananas.)
1 Cup Light Brown Sugar ((packed cup))
2 Cups Flour ((all-purpose))
1/2 Teaspoon Salt
1 Teaspoon Baking Powder ((aluminum free))
1 Teaspoon Baking Soda
1/2 Cup Chopped Walnuts or MINI Chocolate Chips ((optional))

Steps:

  • Prep Time - 10 minutes
  • Baking Time - 1:40 hours
  • Bread Machine Settings - Sweet Quick Bread, Light Color, 2 lb
  • Beat the eggs.
  • Mash bananas with a fork.
  • Soften the butter in microwave.
  • Add the eggs, butter & bananas into the bread pan and then add the other ingredients. Try to follow order of the ingredients listed above so that liquid ingredients are placed in the bread pan first and the dry ingredients second. Be aware that the bread pan should be removed from the bread machine before you start to add any ingredients. This helps to avoid spilling any material inside the bread machine. The bread machine should always be unplugged when removing the bread pan.
  • Put the bread pan (with all of the ingredients) back into the bread machine, close the bread machine lid and then plug in the bread machine.
  • Enter the bread machine settings (Sweet Quick Bread, Light Color) and press the start button. FYI - Before making this recipe, please read the tips section below for more information regarding the sweet quick bread setting used to make banana breads. The setting may be called "quick bread", "quick bread/cake", "cake", etc. However, some manufacturers use the "quick bread" setting are for rapid sandwich-type breads that use yeast (and not for quick breads such as banana bread that use baking powder/soda). Therefore, this setting can be very confusing... but the tips section below will help you to find the right setting to use on your machine. You need to enter the correct banana bread setting used by your SPECIFIC bread machine model or the banana bread could be under or overcooked.
  • Optional - If you want to add chopped walnuts or mini chocolate chips to enhance this basic banana bread recipe, please add them after the first bread machine mixing cycle and before the second mixing (final mixing).
  • When the bread machine has finished baking the bread, unplug the bread machine, remove the bread pan and place it on a wooden cutting board. Use oven mitts when removing the bread pan because it will be very hot!
  • Optional - Use a long wooden skewer to test if the banana bread is completely cooked. Wear oven mitts as the bread pan will be hot. See the tips section for more details on this classic "toothpick" test.
  • After removing the bread pan from the bread machine, you should let the banana bread stay within the warm bread pan on a wooden cutting board for 10 minutes (as this finishes the baking process) before you remove the banana bread from the bread pan. Wear oven mitts.
  • After 10 the minute "cooldown", you should remove the banana bread from the bread pan and place the banana bread on a wire cooling rack to finish cooling. Use oven mitts when removing the bread.
  • Don't forget to remove the mixing paddle if it is stuck in the bread. Use oven mitts as the mixing paddle could be hot.
  • You should allow the banana bread to completely cool before cutting. This can take up to 2 hours. Otherwise, the banana bread will break (crumble) more easily when cut.

Time 1h15m

Yield 10

Number Of Ingredients 7

2 cups all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
¾ cup white sugar
3 tablespoons vegetable oil
2 eggs
2 bananas, peeled and halved lengthwise

Steps:

  • Place ingredients in the pan of the bread machine.
  • Select the Dough setting, and press Start. Mix the bread for 3 to 5 minutes until the bananas are mashed and all ingredients are thoroughly combined. If necessary, use a rubber spatula to push the dough from the sides of the bread pan. When 3 to 5 minutes have passed on the clock display, press Stop. Do not continue mixing. Smooth out the top of the loaf with the rubber spatula.
  • Select the Bake setting, and press Start. The Bake cycle time may vary with machines, but should be about 50 minutes. To test the bread for doneness, insert a toothpick into the center top. Remove the toothpick. If the bread is done, the toothpick will come out clean. If there is batter on the toothpick, reset the machine on Bake and continue to bake an additional 10 to 15 minutes. Test again with the toothpick to ensure the bread is completely baked. Remove the pan from the machine, but allow the bread to remain in the pan for 10 minutes. Remove the bread to cool completely on a wire rack.

AMY'S YUMMY BANANA BREAD (BREAD MACHINE)

Amy's Yummy Banana Bread (Bread Machine) image

I developed this recipe initially through trial and error, and have now got it pretty well 'right'. My husband and in-laws love this! A few notes: you will need to keep an eye on the dough during mixing to make sure it isn't too wet. If it looks too wet, try adding 1 tbs of flour at a time until it looks like a rather wet ball of dough (it should be slightly wetter than ordinary bread dough). I also made this to be slightly more 'healthy' than other banana breads - so feel free to add a bit more butter if you feel the need to be decadent! EDIT: After one review, I realised that I should have said this is not intended to be a very sweet recipe; the main flavour should be the flavour of the banana. If you want to make it sweeter, use 1/2 cup of sugar, rather than the 1/4 cup specified.

Time 2h45m

Yield 8-10 serving(s)

Number Of Ingredients 9

2 very ripe bananas, well mashed
1/4 cup sugar
1/3 cup butter
1 teaspoon ground cinnamon
2 1/2 cups bread mix or 2 1/2 cups flour
1/2 cup water
1 teaspoon yeast, heaped
1/2 cup pecans (optional)
1/2 cup sultana (optional)

Steps:

  • Mash the bananas, and mix mashed bananas with butter, sugar and cinnamon.
  • Add all ingredients to bread machine pan in the order the manufacturer tells you to do so.
  • Turn bread machine on - use the 'sweet' cycle if yours has one. If not, you will need to watch out that the bread doesn't burn at the end.
  • Keep an eye on the dough as it's mixing - if it looks too sticky (it sometimes does), try adding a tablespoon of flour at a time til it looks right. Don't add more than this at a time, otherwise it may be too much!
  • If using, add the pecans and/or sultanas when the beeper sounds.
  • This recipe will never make a full size loaf for many bread machines, so don't worry if it doesn't look 'full'. If I want mine to rise a bit more I just turn the machine off just before it should bake for an extra 20 mins or so, then turn it back on and set it to 'bake only' for 40 minutes.
  • Check the bread after about 40 mins of baking - my bread maker has a tendency to burn this loaf if left in for longer than this.
  • Enjoy fresh and warm, cold, or toasted, with plenty of butter!

MIMI'S ANADAMA BREAD (BREAD MACHINE)

Mimi's Anadama Bread (Bread Machine) image

A delicious bread. Legend has it that a fisherman, tired of his wife's cooking, came up with this blend of stuff and as he sat down to eat, he grumbled, "Anna, damn her" because he was tired of her cornmeal mush. From then on this was called "Anadama" Bread.

BANANA BREAD (BREAD MACHINE RECIPE) RECIPE - (4.3/5)

Banana Bread (Bread Machine Recipe) Recipe - (4.3/5) image

Provided by tlvalentine

Number Of Ingredients 10

1/2 cup milk (room temperature)
2 eggs
1/2 cup vegetable oil
1 cup mashed ripe bananas
2 cups all purpose bread flour
1 cup granulated sugar
1/2 teaspoon salt
2 teaspoons baking powder
1 teaspoon baking soda
1/2 cup chopped walnuts

Steps:

  • 1) Measure all ingredients (except chopped walnuts) into baking pan. Liquid ingredients first, then dry ingredients. Insert pan into the oven chamber and select CAKE CYCLE and DARK CRUST. 2) Halfway through mixing time, using a rubber spatula, scrape down sides of baking pan and the kneading blade. 3) Add chopped walnuts when machine beeps. 4) When signal sounds indicating the end of cycle, leave pan in the oven chamber for an additional 15 to 20 minutes, with the machine turned off. Test for doneness with a skewer by inserting into the centre of the bread. If it comes out clean, the bread is fully baked. 5) Set baking pan on a cooling rack for 10 minutes. Turn bread out and set aside to cool completely. Bread slices better when fully cooled.

Tips:

  • Selecting the Right Bananas: Choose very ripe bananas with dark yellow skin and brown spots. These bananas are sweeter and will yield the best flavor.
  • Mashing the Bananas: Use a fork or potato masher to mash the bananas until smooth. Avoid using a blender or food processor, as this can result in a puree that is too liquid.
  • Measuring the Ingredients: Use measuring cups and spoons to ensure accurate measurements. This will help ensure that your bread turns out perfectly.
  • Mixing the Batter: Stir the ingredients together until just combined. Overmixing can result in a tough bread.
  • Baking the Bread: Bake the bread according to the recipe instructions. Check the doneness of the bread by inserting a toothpick into the center. If the toothpick comes out clean, the bread is done.
