Coconut Macaroon Pie image

I love coconut pie. This is one of the best and easiest to make.

Number Of Ingredients 9

1 1/2 c sugar
2 large eggs
pinch salt
1/2 c butter, melted
2 Tbsp flour, self-rising or all-purpose
1/2 c evaporated milk
1 1/2 c angel flake coconut
1 tsp vanilla extract
1 large unbaked pie shell or 2 small

Steps:

  • 1. Beat eggs, sugar and salt until mixture is lemon colored.
  • 2. Add butter and flour.
  • 3. Add milk, vanilla and coconut.
  • 4. Pour into pie shell(s) and bake at 325 degrees for about 40 minutes.
