1 (8 ounce) package mushrooms
1 teaspoon garlic salt
6 eggs, beaten

2 cups shredded Monterey Jack cheese

2 Tablespoons olive oil
8 oz. lean ground beef (or ground turkey)
1 small onion, chopped
1/2 cup frozen corn, thawed
One 4 oz. can diced green chilies
One 14.5 oz. can pinto or black beans, drained
One 14.5 oz. can diced tomatoes, undrained
1-1/2 cups water
2 cups grated cheese, mix of cheddar and jack cheeses
