1 (10-ounce) jar sun-dried tomatoes packed in oil, chopped (oil reserved)
1 small onion, chopped
4 garlic cloves, minced
1/4 cup tomato paste
2/3 cup dry white wine
8 ounces angel hair pasta
Salt and freshly ground black pepper
2 ounces soft fresh goat cheese, coarsely crumbled
2 tablespoons chopped fresh Italian parsley leaves

Steps:

  • Heat 2 tablespoons of the oil from the sun-dried tomatoes in a heavy large skillet over medium heat. Add the onion and saute until tender, about 3 minutes. Stir in the garlic and saute until fragrant, about 1 minute. Add the tomato paste and cook for 2 minutes, stirring constantly. 1 tablespoon sun-dried tomato oil
1 small yellow onion, thinly sliced
2 garlic cloves, minced

1 teaspoon sugar
1 lb angel hair or other thin pasta
salt as needed
3 tablespoon olive oil
3 clove garlic, peeled and minced
1 small shallot, peeled and minced
2 tablespoon fresh oregano leaves, minced
3 ears of fresh corn kernels
1 tablespoon balsamic vinegar
1 cup freshly grated parmesan cheese
2 tablespoon flat leaf parsley, minced
fresh cracked pepper (asneeded)

Steps:

  • Cut the tomatoes into fine julienne and place them, along with the sugar in a small bowl. Pour in just enough hot water to cover. Set aside to hydrate until soft, about 30 minutes. Drain well, squeezing out excess liquid. You may skip this step if you choose oil packed or pre-marinated sun-dried tomatoes. Bring a large pot of water to a boil and add good amount of salt. Add the pasta and cook until al dente, according to package instructions. Retain some of the pasta water for the sauce. Make the sauce: Heat the olive oil in a large saute pan over medium-high heat until hot. Add the garlic and shallots; saute briefly until lightly colored. 1/2 cup fresh basil, chopped
1/2 cup parmesan cheese, freshly grated
2 tablespoons extra virgin olive oil
4 -8 garlic cloves, finely minced

2 1/2 cups vine-ripe tomatoes, seeded and diced medium
1 teaspoon coarse salt

3 boneless, skinless chicken breasts (about 4 ounces each)
