ANGEL HAIR PASTA WITH PEPPERS AND TOMATOES
This simple pasta celebrates the end-of-summer harvest and is perfect for a light lunch or supper, or as part of a buffet. Bell peppers and other sweet peppers - like Corno di Toro and many other varieties of peppers of every hue - ripen in late summer, the same time as long-awaited flavorful (and multicolored) tomatoes, making their pairing seem almost preordained.

GARLIC ANGEL HAIR SHRIMP
This was inspired by one of my favorite restaurant pasta dishes. I keep the lemon separate until the end due to a picky family member, but you could add it earlier if everyone likes lemon. Do not use pre-cooked shrimp and don't overcook the shrimp.

ANGEL HAIR WITH CRUSHED TOMATOES AND BASIL
Steps:
- 1. Bring a large pot of water to a boil and generously salt it.
- 2. Cut a slit in the stem end of each tomato. Gently lower the tomatoes into the boiling water. Boil until the skin peels back from the slits, about 30 seconds. With a slotted spoon, transfer to a large bowl. Keep the water boiling.
- 3. While the tomatoes cool, on a cutting board, finely mince the garlic with the sugar into a paste. Peel off and discard the tomato skins, then transfer the tomatoes to a large bowl. With your hands, crush the tomatoes until chunky. Add the garlic-sugar paste and oil and crush the tomatoes into fine bits.
- 4. Add the pasta to the boiling water and cook until just al dente. Drain and transfer to the tomato sauce. Toss well. Tear the basil leaves into the bowl, season to taste with salt and pepper, and toss again.
- 5. Wipe up any oil drips or tomato sauce splatters from the counter with Clorox® Disinfecting Wipes*.
- *Use as directed. For surfaces that may come in contact with food, a potable water rinse is required.

ANGEL HAIR WITH BALSAMIC TOMATOES
This tastes like something I once had at Olive Garden, except I think they made it with fresh tomatoes. That limits it to a seasonal dish, since winter tomatoes, frankly, stink. Since this recipe uses canned tomatoes, you can feel gourmet at anytime. It goes together pretty quickly, especially after the first time you prepare it.

Steps:
- Open the can of tomatoes.
- Do not drain, but dump the whole thing in a non-metallic bowl.
- Stir in the balsamic vinegar, black pepper, basil, and salt if you really think you need it.
- Most canned tomatoes have enough salt for this, and if you're using no-salt tomatoes, its probably because you're not SUPPOSED to have the salt.
- So drop the salt shaker, buddy.
- Let the tomatoes, et al, stand about 10 minutes.
- Sauté garlic in olive oil until translucent.
- Do not brown.
- Remove skillet from the burner, leaving garlic and oil in pan.
- Set aside.
- If you haven't already, put on a pot of water to boil for the pasta.
- A big pot, so it has lots of elbow room.
- People should stick together, not pasta.
- Hmmm, that should be a commercial.
- Drain the tomatoes, catching the juice in the skillet with the sauteed garlic.
- Bring this to a boil and then simmer until the liquid is reduced by about 1/3.
- It needs to do this in order to concentrate the flavors a bit.
- While the liquid is reducing, drop the pasta into the boiling water, and cook according to package directions, just until al dente.
- When the pasta is done, drain and keep hot if the sauce is not done yet.
- Once the liquid has reduced enough, add the tomatoes, and heat briefly.
- You want them to get HOT, not MUSHY.
- Pour all this over the hot pasta and toss.
- Serve immediately, nice and hot, passing parmesan to let everyone top their own.
- This goes nicely with my Green Bean Compromise and a tossed salad with my Extremely Bad Breath Garlic& Green Olive Dressing, but serve what you like.
- I won't mind.

ANGEL HAIR PASTA WITH LEMON, GARLIC AND TOMATOES
Served with a fresh salad, I think this is a perfect summer weekday meal. It comes together very fast if you prepare all the ingredients beforehand. (note: typo in wine amount has been corrected - 1/4 cup, not 1 1/4 cup - yowza, that'd be a lot of wine!)

Steps:
- Cook the pasta in several quarts of salted water (keep an eye on it - angel hair cooks a lot faster than other pasta and you don't want it mushy). Place it in a large serving bowl, add the basil and Parmesan cheese and toss to mix.
- While the pasta is cooking, heat the olive oil in a large skillet and saute the garlic for a minute or so until it *just* begins to change color. Add the wine and cook until it has been reduced by about half (2-4 minutes). Stir in the lemon juice and tomatoes and remove the sauce from heat until the pasta is ready.
- Pour lemon-tomato sauce over pasta mixture, add salt and pepper to taste and toss to mix. Serve with extra Parmesan on the side, if desired.
ANGEL HAIR WITH CHICKEN AND SUN-DRIED TOMATOES
Steps:
- Cook pasta 2 minutes less than the package indicates. Drain; set aside. Mix cornstarch, milk, vinegar, salt and 1/2 cup water in a bowl; set aside. Coat a large skillet with cooking spray. Add oil and warm on high heat. Sauté chicken and garlic until chicken begins to brown, 2 or 3 minutes. Add tomatoes, asparagus and mushrooms. Cook 2 or 3 more minutes, until chicken is no longer pink in center and vegetables begin to soften. Reduce heat to low and stir in pasta and cornstarch mixture. Cook 1 or 2 minutes until sauce begins to thicken. Sprinkle with cheese and serve immediately.

ASPARAGUS WITH TOMATOES
This is a delicious way to take advantage of early spring's flavorful asparagus. A great dish to accompany large, busy meals, as most of the work can be done ahead of time and the asparagus reheated with the tomatoes and garlic at the last minute while the roast (or whatever else) is resting. Also a delicious preparation for green beans in place of the asparagus.

DELICIOUS ANGEL HAIR IN TOMATO, TUNA AND OLIVE SAUCE
You'll love this blend of tomatoes, tuna and black olives in a homemade tomato sauce. My mom would make this during Lent for the family, but you'll want to make it all year round. Tips:
- Choose fresh, flavorful ingredients: The fresher your ingredients, the better your dish will taste. Look for asparagus that is bright green and firm, and tomatoes that are ripe and juicy.
- Cook the asparagus properly: Asparagus can be cooked in a variety of ways, but the most popular methods are roasting, grilling, and boiling. Roasting brings out the natural sweetness of the asparagus, while grilling gives it a slightly smoky flavor. Boiling is the quickest and easiest method, but it can result in asparagus that is mushy.
- Don't overcook the tomatoes: Tomatoes should be cooked just until they are softened, but still hold their shape. Overcooked tomatoes will become mushy and lose their flavor.
- Add some fresh herbs: Fresh herbs, such as basil, parsley, or thyme, can add a pop of flavor to your dish. Add them at the end of cooking to preserve their flavor.
- Serve immediately: This dish is best served immediately after it is cooked. The asparagus and tomatoes will lose their flavor if they sit for too long.
Conclusion:
Angel hair pasta with asparagus and tomatoes is a simple but delicious dish that is perfect for a quick and easy meal. It is also a great way to use up fresh, seasonal produce. With a few simple tips, you can make this dish a hit at your next dinner party.
