MAMA NEELY'S BAKED BEANS

Mama Neely's Baked Beans image

Pat: Every Fourth of July, Mama Neely made her famous baked beans: she'd brown ground beef and then doctor that beef with molasses, brown sugar, and plenty of spices. Let me tell you, those beans were good. And so are these. We've found that using smoked sausage in place of the ground beef (or pork shoulder, as in our restaurant recipe) adds a smoky depth to the dish. Once you make these beans, there is no going back. If you want to put your own spin on it, you can use kidney beans instead of pork and beans, but I say my mama's way is best.

Yield Serves 6

Number Of Ingredients 11

2 tablespoons canola oil
1 large onion, finely chopped
3 cloves garlic, finely chopped
1/2 pound smoked sausage, sliced
Three 16-ounce cans pork and beans
1/2 cup ketchup
1/2 cup light molasses
1/4 cup light-brown sugar
2 tablespoons apple-cider vinegar
2 tablespoons prepared mustard
Dash of hot sauce, preferably Tabasco

Steps:

  • Preheat the oven to 350 degrees F. Heat the oil in a Dutch oven set over medium- high heat. Once it's hot, toss in the onion and garlic, and saute until the onion is tender, about 3 or 4 minutes. Add the sausage, and continue to cook until the meat has browned, about 4 minutes more. Stir in the pork and beans, ketchup, molasses, sugar, vinegar, mustard, and hot sauce. Bring the beans up to a simmer, then put in the hot oven for 45 minutes, uncovered, until the mixture is bubbly and thick.

Time 16h30m

Yield 6 servings

Number Of Ingredients 11

1 pound dried Great Northern beans
1 pound bacon, chopped
1 onion, chopped
2 jalapenos, chopped
1/4 cup tomato paste
1/4 cup dark brown sugar
1/4 cup molasses
Vegetable broth
1/4 teaspoon cayenne pepper
1 teaspoon black pepper
2 teaspoons kosher salt

Steps:

  • Heat oven to 250 degrees F.
  • Soak beans in a plastic container overnight in just enough cold water to submerge them completely.
  • Place a cast iron Dutch oven over medium heat and stir in the bacon, onion, and jalapenos until enough fat has rendered from the bacon to soften the onions, about 5 minutes. Stir in the tomato paste, dark brown sugar, and molasses.
  • Drain the beans and reserve the soaking liquid. Add the drained beans to the Dutch oven. Place the soaking liquid in a measuring cup and add enough vegetable broth to equal 4 cups of liquid. Add the liquid to the Dutch oven and bring to a boil over high heat. Add in cayenne, black pepper and salt. Give them a stir and cover with the lid. Place the Dutch oven in the oven for 6 to 8 hours, or until the beans are tender.

This recipe won me first place in a baked bean cook-off at the Western Idaho State Fair. They start with dried beans, so give yourself some extra time. Kind of sweet and savory and yummy.

Time 3h15m

Yield 12

Number Of Ingredients 21

3 smoked ham hocks, or more to taste
1 large onion, diced
1 stalk celery, chopped
2 large bay leaves
1 tablespoon minced garlic, or to taste
1 teaspoon liquid smoke flavoring
1 teaspoon dried basil
½ teaspoon ground thyme
½ teaspoon dried rubbed sage
salt and ground black pepper to taste
3 cups dried pinto beans, sorted and rinsed
1 (12 ounce) package bacon, cut into 1-inch pieces
1 large onion, diced small
1 (15.5 ounce) can crushed pineapple
¾ cup brown sugar, or less to taste
2 tablespoons Worcestershire sauce
1 tablespoon steak sauce (such as A1®)
1 tablespoon good steak sauce
1 ½ teaspoons minced garlic, or to taste
1 teaspoon liquid smoke flavoring
salt and ground black pepper to taste

Steps:

  • Fill a large pot 3/4 full with water. Use a sharp knife to cut 3 or 4 slits evenly spaced through skin on ham hocks. Add ham hocks, onion, celery, bay leaves, garlic, liquid smoke, basil, thyme, sage, salt, and pepper to the water and bring to a good boil for 1 hour.
  • Add beans to the pot. Return to a boil and cook gently until beans are tender, 45 minutes to 1 hour. Check liquid level often and add more water if necessary.
  • Preheat the oven to 400 degrees F (200 degrees C).
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon on paper towels. Transfer bacon to a large bowl and add onion.
  • Use a slotted spoon to dip beans and ham hocks out of the water and into a 9x13-inch baking pan. Reserve liquid from the beans. Clean all meat off of the ham hocks, discard bones, and add meat to the bowl with the bacon and onions.
  • Mix in pineapple, brown sugar, and Worcestershire sauce. Stir in steak sauce, good steak sauce, and garlic. Add liquid smoke, salt, and black pepper; mix until completely incorporated. Fold in bacon mixture. Adjust seasonings if necessary. Pour bean mixture into the baking pan and add some reserved bean liquid over beans if necessary.
  • Bake in the preheated oven until beans are hot and bubbly all around the edges, about 30 minutes.

Tips:

  • Prep the Beans: Before cooking, sort and rinse the beans to remove any debris or damaged beans. Soaking the beans overnight or for at least 4-8 hours helps reduce cooking time and improves their texture.
  • Use Quality Ingredients: Choose a flavorful combination of beans, such as Great Northern and kidney beans. Use fresh vegetables like onions, celery, and bell peppers for a vibrant taste.
  • Add Aromatics: Elevate the flavor of your baked beans by adding aromatic ingredients like garlic, mustard, and chili powder. You can also include herbs like thyme or rosemary for a more complex flavor profile.
  • Use a Variety of Sweeteners: Don't limit yourself to just brown sugar. Experiment with different sweeteners like molasses, maple syrup, or honey for a unique taste.
  • Cook Low and Slow: Baked beans are best when cooked low and slow. This allows the flavors to meld and develop fully. Simmer the beans for at least 2 hours or bake them in the oven at a low temperature for several hours.
  • Taste and Adjust: As the beans cook, taste them periodically and adjust the seasonings as needed. You may want to add more salt, pepper, or sweetener to suit your preferences.
  • Serve with Sides: Baked beans are a versatile dish that can be served with various sides. Try them with cornbread, mashed potatoes, or coleslaw for a classic American meal.

Conclusion:

Annie's Award-Winning Baked Beans are a delicious and comforting dish that is perfect for any occasion. With its combination of tender beans, flavorful sauce, and a hint of sweetness, this recipe is sure to be a hit. Whether you're hosting a backyard barbecue or simply looking for a hearty and satisfying meal, these baked beans will not disappoint. So gather your ingredients, fire up the oven, and get ready to indulge in a culinary masterpiece.
