4 pounds rhubarb
2 cups plus 1 teaspoon sugar
2 .25-ounce packets unflavored gelatin
1/2 cup heavy cream
1/2 teaspoon vanilla extract

Steps:

  • Trim about 2 inches from each end of the rhubarb and discard. Roughly chop the stalks and add to a small stock pot with 2 cups of the sugar and 1 1/2 cups water. Bring to a boil over high heat, stirring occasionally. Cover, leaving the lid slightly ajar, and boil until the rhubarb mostly falls apart, about 3 minutes, stirring once or twice. Remove from the heat and let steep, covered, for 5 minutes.
  • Place 1/2 cup water in a medium bowl and sprinkle the gelatin on top. Strain the hot rhubarb mixture through a fine mesh strainer right into the gelatin, whisking gently. Press on the solids in the strainer to get as much liquid as possible from the rhubarb. Discard the solids.
  • If there is a lot of foam and you prefer a clear surface, skim it with a spoon and discard it. Pour the mixture into eight 4-ounce jelly jars. Chill until set, at least 3 hours or overnight.
  • When ready to serve, whip the cream, vanilla extract and the remaining 1 teaspoon sugar to very soft peaks and dollop it over the gelatin.

2 tablespoons water
1 (3 ounce) package raspberry flavored Jell-O® mix
1 cup cold water
1 cup chopped apple
½ cup chopped walnuts

  • In a saucepan over medium heat, combine the rhubarb, sugar, and 2 tablespoons water. Bring to a boil, and cook for about 15 minutes, or until rhubarb is mushy. Mix well to form a sauce. Taste, and adjust sugar if needed. Reserve 1 cup. Save any extra for other uses.
  • In a medium bowl, stir together the raspberry flavored gelatin and 1 cup of the boiling hot rhubarb mixture until completely dissolved. Stir in 1 cup cold water, then mix in the apples and walnuts. Pour into a serving bowl, and refrigerate for 2 to 4 hours, or until set. 8 cups rhubarb, chopped in 2 . 5 cm slices
3 cups water
7 cups granulated sugar
4 ml butter
2 (85 ml) packages liquid pectin

Steps:

  • prepare juice by placing rhubarb and water in a large stainless steel saucepan on high heat.
  • bring to a boil then simmer for 5 minutes, then remove from heat.
  • pour through a strainer lined with cheesecloth, then tie up the rhubarb pulp into a "bag" and hang to drip overnight.
  • clean jars, lids and rings in hot, soapy water. put jars in cannng kettle and bring to a boil. put lids and rings in a bowl of very hot water.
  • measure juice. you should have 850 mL, if not add water to reach desired amount.
  • combine juice and sugar in a large stainless steel saucepan, mixing well.
  • add butter, to reduce foaming.
  • bring juice and sugar to a full rolling boil over high heat.
  • add liquid pectin, squeezing pouches until totally empty.
  • continue to boil for 1 full minute, then remove from heat.
  • skim foam from jelly.
  • pour into 250 mL jars to 1 cm from rim, wipe tops if necessary.
  • seal with lid, tighten ring fingertip tight.
  • bring canning kettle back to a boil, process for 10 minutes.
  • remove from water and place on a towel to stand for 24 hours. Enjoy!

4-1/2 to 5 pounds rhubarb (4-1/2 to 5 quarts), cut into 1-inch pieces
7 cups sugar
1 to 2 drops red food coloring, optional
2 pouches (3 ounces each) liquid fruit pectin

  • Grind the rhubarb in a food processor or grinder. Line a strainer with 4 layers of cheesecloth and place over a bowl. Place rhubarb in strainer; cover with edges of cheesecloth. Let stand for 30 minutes or until liquid measures 3-1/2 cups. Pour juice into a Dutch oven; add sugar and, if desired, food coloring. , Bring to a boil over high heat, stirring constantly. It was titled "Mrs. Edds' Rhubarb Pie Filling" and to appreciate the charm and wit of a country housewife from the 40's I am writing the recipe much the same way the original author did (Mrs. Edd). (I think Mrs. Edd had an issue with double dippers too!)

2 lbs tender fresh rhubarb
2 eggs
1 -1 1/4 cup sugar
2 -4 tablespoons flour

Steps:

  • Wash and dry rhubarb (do not peel unless the skin is very tough).
  • Cut the stalks into about 1/2 inch pieces.
  • Beat the eggs and add sugar and flour which have been mixed together.
  • Beat until the three are as one.
  • Mix the egg-sugar mixture with the rhubarb and fill the pie shell.
