1 box (15-17 ounce size) cake mix, unprepared (any flavor)
1/2 cup oil
2 eggs
1/2 teaspoon extract (vanilla, almond, etc), optional
1 cup add-ins chocolate chips, nuts, raisins, toffee chips, etc (optional)

Steps:

  • Preheat the oven to 350 degrees F. Combine the cake mix, oil, eggs, and extract (if using) in a mixing bowl. Beat on medium speed with an electric mixer until smooth. Stir in any add-ins by hand. We went on a diet so I no longer keep white flour in the house, however a single cake mix managed to elude me. I found it when I was looking for something to bring to church. Now I keep a cake mix for bringing cookies, it's a lot less dangerous than a bag of flour! (Its best with a mix that has pudding in it for chewiness; you can also use the dry ingredients from your favorite from scratch recipe).

1 (18 ounce) box cake mix (any flavor but angel food)
2 eggs
1/2-3/4 cup Crisco

Steps:

  • Toss all ingredients into a bowl, using enough Crisco to form a stiff dough. (I found it to take less time than pulling my mixer out, so I mix by hand).
  • Form into little balls, place on a baking sheet 2 inches apart, gently flatten the balls, and bake at 350°F for 8-10 minutes, till puffy, and just barely golden around the edges. (They do spread a little while baking).
  • Remove from heat, cool 5 minutes before removing to a rack to cool. (Okay, I didn't use a rack the second time, they still turned out great!) They will shrink down a little in height and form a perfect cookie!
