18 whole almonds, skins on, lightly toasted
500 ml light red wine, like pinot noir
1/2 c. honey

2 Tbsp freshly grated orange or lemon zest, plus extra for garnish
2 cinnamon sticks

Add the dates and poach until skin blisters. Remove and peel away skins while still warm. Discard skins. Add the remaining ingredients to the wine, and simmer until reduced by half, about 20 minutes. Strain wine and return to saucepan. Add the dates to the wine sauce and poach gently until warmed through, but not too hot. Place three dates alongside fresh ricotta or mascarpone cheese and drizzle a spoonful of the wine sauce over. Garnish with thinly sliced orange or lemon zest.

SPICED ORANGES AND DATES

Spiced Oranges and Dates image

Fresh oranges and dates in a spiced syrup. Recipe modified from a Woolworths Fresh Magazine recipe. I love fresh dates and this makes for a great fresh fruit dessert. Great served with fresh Greek yogurt or custard. You can add some orange liquer to make this extra special (add with the water and sugar). To toast your almonds- add them to a dry pan and heat them until fragrant and toasted. keep turned or tossed as they will toast quickly. Vegan suitable if served without the custard or yogurt

Yield Makes 6 servings

Number Of Ingredients 14

3 1/2 pounds chicken breast halves, thighs, and drumsticks
1 tablespoon all purpose flour
1 tablespoon extra-virgin olive oil
2 pounds shallots (about 11 large), peeled
3 cinnamon sticks
1 1/2 teaspoons ground ginger
1 teaspoon ground cumin
1/2 teaspoon turmeric
1/8 teaspoon cayenne pepper
3 cups low-salt chicken broth
5 tablespoons fresh lemon juice, divided
12 dates, pitted, halved
1/4 cup almonds, toasted, coarsely chopped
1/4 cup chopped fresh cilantro

Steps:

  • Sprinkle chicken pieces with salt, pepper, and flour. Heat olive oil in heavy large pot over medium-high heat. Add half of chicken pieces to pot and cook until browned on all sides, turning occasionally, about 15 minutes. Transfer chicken to baking sheet or platter; repeat with remaining chicken. Pour off all but 2 tablespoons fat from pot and discard. Reduce heat to medium. Add shallots to pot; sauté until golden, about 6 minutes. Add cinnamon sticks, ginger, cumin, turmeric, and cayenne. Stir until fragrant, about 1 minute. Increase heat to high; add broth and 3 tablespoons lemon juice. Bring to boil; reduce heat to low, cover, and simmer until shallots begin to soften, about 18 minutes. Place chicken pieces atop shallots in pot. Bring to boil over medium heat. Reduce heat to medium-low, cover, and simmer until juices run clear when thickest part of drumstick is pierced with knife, about 25 minutes.
  • Transfer chicken and shallots to platter; tent with foil. Boil juices in pot until slightly thickened. Stir in dates and remaining 2 tablespoons lemon juice. Reduce heat and simmer gently until dates are heated through, about 2 minutes. Pour sauce and dates over chicken. Sprinkle with almonds and cilantro, and serve.

Tips:

  • Choose soft, plump, and fresh dates for the best results.
  • If the dates are too dry, soak them in warm water for about 10 minutes to soften them.
  • Use a sharp knife to make a slit in the dates, being careful not to cut all the way through.
  • Stuff the dates with a variety of fillings, such as nuts, cheese, or dried fruit.
  • Drizzle the dates with honey or syrup for extra sweetness.
  • Bake the dates in a preheated oven until they are slightly caramelized.
  • Serve the dates warm or at room temperature.

Conclusion:

Apicius spiced dates are a delicious and easy-to-make appetizer or snack that can be enjoyed by people of all ages. With their sweet and savory flavor, these dates are sure to be a hit at your next party or gathering.
