APPETIZER MUSSELS

Appetizer Mussels image

What timing! Although I have eaten mussels many times, October 17 was the very first time I cooked them, and (if I do say so myself!) they were great. A friend and I ate every last one, and he raved about the flavor the whole time. This is my own recipe.

Time 20m

Yield 3

Number Of Ingredients 6

¾ cup white wine
¾ cup tomato and clam juice cocktail
3 cloves garlic - peeled and sliced
½ teaspoon crushed red pepper flakes
1 pound mussels, cleaned and debearded
3 tablespoons butter

Steps:

  • In a stock pot, combine the wine, juice cocktail, garlic and pepper flakes. Bring to a boil and add mussels.
  • Cover and continue to boil for about 4 to 6 minutes or until all the mussels have opened. Discard any mussels that haven't opened.
  • Remove mussels from liquid and keep warm. Pour off liquid to leave about 1 cup. Try not to discard the garlic. Boil the 1 cup of liquid until it's reduced to about 3/4 of a cup.
  • Add butter and stir until butter has melted and sauce has thickened slightly. Serve mussels with sauce.

Tips:

  • Choose the right mussels: Look for mussels that are tightly closed and have no cracks or chips in their shells. Avoid any mussels that are open or have a foul odor.
  • Clean the mussels thoroughly: Use a stiff brush to scrub the mussels under running water. Remove any barnacles or other debris from the shells.
  • Cook the mussels quickly: Mussels cook quickly, so it's important not to overcook them. Overcooked mussels will become tough and rubbery.
  • Use a variety of cooking methods: Mussels can be steamed, boiled, baked, or grilled. Each cooking method will produce a different flavor and texture.
  • Add flavor to the mussels: Mussels have a mild flavor, so it's important to add flavor to them when cooking. You can use a variety of ingredients to flavor mussels, such as garlic, shallots, white wine, lemon juice, and herbs.
  • Serve the mussels immediately: Mussels are best served immediately after they are cooked. They can be served as an appetizer or main course.

Conclusion:

Mussels are a delicious and versatile seafood that can be enjoyed in many different ways. With their mild flavor and delicate texture, mussels are a great choice for both casual and formal meals. Whether you're steaming them, boiling them, baking them, or grilling them, mussels are sure to be a hit with your family and friends. So next time you're looking for a seafood dish that's both delicious and easy to prepare, give mussels a try!
