1/4 teaspoon salt

1/4 teaspoon grated lemon peel
1 container (4 to 5 oz) garlic-and-herb spreadable cheese
5 whole wheat flatbreads (6 inch) or pita fold breads
1/3 cup finely shredded sharp Cheddar cheese

Steps:

  • In small bowl, place vegetables. Sprinkle with salt, pepper and lemon peel.
  • Spread 2 tablespoons spreadable cheese over each flatbread. Top each with 1/4 cup vegetable mixture. Sprinkle with Cheddar cheese. Cut each into 6 wedges.

This is a very versatile appetizer pizza recipe. A coworker of mine brought a variation of this for a potluck and I made my own from it. Any veggies can be used but I like to make an Italian version. You can mix the garlic in with the cream cheese as well, or sprinkle it on top.

1 (10 ounce) container refrigerated pizza dough
1 (8 ounce) package cream cheese, softened
1 cup chopped tomatoes
1 (6.5 ounce) jar marinated quartered artichoke hearts, chopped
1 (2.25 ounce) can sliced black olives
2 tablespoons chopped fresh basil
2 teaspoons minced garlic

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking pan.
  • Press pizza dough evenly into the bottom of the prepared pan.
  • Bake in the preheated oven until crust is firm on top, 10 to 12 minutes.
  • Remove crust from the oven and let cool thoroughly, 15 to 30 minutes.

9 flour tortillas (6 inches)
3 tablespoons olive oil
TRADITIONAL PIZZAS:
1/3 cup chopped pepperoni
3/4 cup shredded Colby-Monterey Jack cheese
1 jar (14 ounces) pizza sauce
MEDITERRANEAN PIZZAS:
1/2 cup chopped seeded tomato
1/3 cup sliced ripe olives
3/4 cup crumbled feta cheese
1/4 cup thinly sliced green onions
1 carton (7 ounces) hummus
MARGHERITA PIZZAS:
9 thin slices tomato
1 package (8 ounces) small fresh mozzarella cheese balls, sliced
1 tablespoon minced fresh basil
1 cup prepared pesto

  • Brush one side of each tortilla with oil. Place oiled side down on grill rack. Grill, uncovered, over medium heat for 2-3 minutes or until puffed.
