6 tablespoons all-purpose flour
Chicken broth
A few fresh sage leaves

Whisk in chicken broth until the mixture is smooth. Bring to a simmer, then reduce the heat to low and cook until it becomes a light tan color.
  • Meanwhile, remove the turkey from roasting pan and set aside to rest. Discard all but 1 tablespoon of the drippings from roasting pan. Put the pan on the stovetop over medium heat. When pan juices are hot, add the sage leaves and fry until fragrant, about 1 minute. Remove the neck bone. Add a big splash of apple juice and scrape up the browned bits at the bottom of the pan.
  • Strain this liquid into the thickened chicken broth mixture and season with salt, pepper and nutmeg. Whisk to combine. Bring to a simmer and cook for a few minutes until thick and creamy, about 3 to 5 minutes. Serve with your turkey and sides.

Number Of Ingredients 11

4 ounces fresh sourdough bread, trimmed of crust and cut into slices
1 piece peeled fresh ginger (1 1/2 inches), coarsely chopped
2 garlic cloves, coarsely chopped
2 small onions, coarsely chopped (about 1 1/2 cups)
2 green apples (1 cored, peeled, and coarsely chopped; 1 whole)
2 large eggs, beaten
3 pounds ground turkey
4 teaspoons coarsely chopped fresh sage, plus leaves for garnish
2 teaspoons coarse salt
1 teaspoon freshly ground pepper
2 tablespoons pure maple syrup

Steps:

  • Preheat oven to 375 degrees. Process bread in a food processor until coarse crumbs form. (You should have about 2 cups.) Transfer to a large bowl. Put ginger and garlic in the food processor; process until chopped. Add onion and chopped apple; puree. Transfer to the bowl with breadcrumbs. Add eggs, turkey, sage, salt, and pepper. Mix thoroughly with your hands.
  • Transfer to a 12 3/4-by-4 1/2-by-3 1/4-inch terrine mold. Peel and core remaining apple. Cut into 1/8-inch-thick rings. Arrange apples on top of loaf. Bake until bubbling around corners, about 30 minutes. Cover, and bake until apples are soft and translucent, about 15 minutes. Uncover; brush with maple syrup. Bake until loaf is no longer pink in center, about 10 minutes. Let stand 15 minutes before serving.

Tips:

  • Dry the turkey thoroughly before seasoning and cooking. This will help the seasoning adhere and prevent the skin from becoming soggy.
  • Use a combination of herbs and spices to flavor the turkey. This will create a more complex and flavorful dish.
  • Stuff the turkey with a mixture of bread, herbs, and vegetables. This will help keep the turkey moist and flavorful during cooking.
  • Roast the turkey on a rack in a roasting pan. This will allow the air to circulate around the turkey and help it cook evenly.
  • Cook the turkey to an internal temperature of 165 degrees Fahrenheit. This will ensure that the turkey is cooked through and safe to eat.
  • Let the turkey rest for 10-15 minutes before carving. This will allow the juices to redistribute throughout the turkey, making it more tender and flavorful.

Conclusion:

Apple and sage turkey is a classic holiday dish that is sure to impress your family and friends. With a little planning and preparation, you can easily make this delicious and flavorful dish at home. So next time you're looking for a special occasion meal, give apple and sage turkey a try. You won't be disappointed!
