PORK CHOPS WITH APPLE BALSAMIC SAUCE AND BLUE CHEESE TOMATO GRATIN
Steps:
- Cook garlic and shallot in 1 tablespoon oil in a 3-quart heavy saucepan over low heat, stirring occasionally, until softened, 3 to 5 minutes. Add wine and vinegar and boil until reduced to about 1/2 cup, 8 to 10 minutes. Add chicken and veal stocks and boil until reduced to about 1 1/3 cups, 15 to 20 minutes.
- Preheat oven to 400°F.
- Heat remaining 2 tablespoons oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking. While oil is heating, pat pork chops dry and season with salt and pepper. Sear 3 chops, turning over once, 4 minutes total, then transfer to a shallow baking pan. Sear remaining chops in same manner, then transfer to baking pan (reserving fat in skillet). Roast in middle of oven until an instant-read thermometer inserted horizontally into center of chops (do not touch bone) registers 155°F, 8 to 12 minutes.
- While pork is roasting, peel apple and cut into 1/3-inch dice. Pour off all but 1 tablespoon fat from skillet, then cook apple and raisins over moderate heat, stirring occasionally, until apple is golden brown and caramelized but not falling apart, 2 to 3 minutes. Add sauce and simmer, stirring, 1 minute. Season with salt and pepper.
- Spoon sauce over pork chops.

Steps:
- In a small saucepan, heat 1 teaspoon oil over medium-low. Add shallot; cook, stirring, until soft, 2 to 4 minutes. Add rice and 3/4 cup water; season with salt and pepper, and bring to a boil. Reduce to a simmer; cover, and cook until rice is tender and liquid has been absorbed, about 25 minutes. Set aside.
- Meanwhile, in a medium nonstick skillet, heat remaining 2 teaspoons oil over medium-low. Season pork with salt and pepper, and dust with flour.
- Place pork in skillet, and arrange apple wedges in a single layer around it. Cook until pork and apples are golden brown, 5 to 7 minutes, and turn over. Cook until pork is opaque throughout, 2 to 3 minutes more. Serve pork with apples and wild rice.
Tips:
- Choose the right pork chops: Look for pork chops that are at least 1 inch thick and have a good amount of marbling. This will ensure that they stay juicy and flavorful during cooking.
- Brine the pork chops: Brining the pork chops in a mixture of water, salt, and sugar before cooking helps to tenderize them and keep them moist. You can brine the pork chops for anywhere from 30 minutes to overnight.
- Cook the pork chops over medium heat: Cooking the pork chops over medium heat helps to prevent them from overcooking and becoming dry. Cook the pork chops for about 5-7 minutes per side, or until they reach an internal temperature of 145 degrees Fahrenheit.
- Let the pork chops rest before serving: Letting the pork chops rest for a few minutes before serving allows the juices to redistribute throughout the meat, resulting in a more tender and flavorful pork chop.
Conclusion:
Apple balsamic pork chops are a delicious and easy-to-make dish that is perfect for any occasion. The combination of sweet apples, tangy balsamic vinegar, and savory pork chops is sure to please everyone at the table. Serve the pork chops with rice or your favorite side dish for a complete meal.
