EASY APPLE-BLUEBERRY CRISP

Easy Apple-Blueberry Crisp image

This is a variation off the Orchard Mills Apple Crisp package. I had about a cup of frozen blueberries left after making Recipe #288137, so I thought I would give this a try for quick Saturday night dessert. Also, I purchased too many Granny Smith apples a little bit ago and had to find a way to use them up. Put a scoop of vanilla ice cream on the side for something extra special! :)

BEST EVER BLUEBERRY APPLE CRISP

Best Ever Blueberry Apple Crisp image

I have a friend who smacks his lips when I serve this and my daughter is notorious for eating this for breakfast!!! I have to hide it if I want any leftovers for supper the next day!!! My crisps are chock full of fruit...I never measure the fruit. I "eye ball" the blueberries...then add enough apple to give colour. I have used this topping for peach/blueberry, raspberry/rhubarb/apple, rhubarb/blueberry or basically use up all the frozen fruit I have in my freezer. I serve this with frozen vanilla ice cream or yogurt. This recipe could be cut in half quite successfully

Provided by Abby Girl

Categories     Dessert

Time 1h

Yield 12-16 serving(s)

Number Of Ingredients 10

3 -4 apples, peeled and cut into chunks
4 -6 cups blueberries
1/2 cup sugar (depending on tartness of fruit) (optional)
1 cup flour
3/4 cup brown sugar
1 cup rolled oats
1 teaspoon baking powder
1 teaspoon cinnamon
1/4 teaspoon salt
1/2 cup butter

Steps:

  • Choose baking dish. Add enough blueberries to come 1/3 to 1/2 up the dish, keep in mind that the blueberries will "shrink" when cooked.
  • If frozen, thaw them slightly. Flour could be added to thicken the frozen blueberries if desired. Add sugar if the fruit is tart, but the topping is sweet enough that it is not needed. Cut enough apples (depending on size) into the blueberries to give colour -- making sure that you have enough room for the topping
  • Topping: Combine flour, brown sugar, rolled oats, baking powder, cinnamon and salt. Mix well. Cut butter into flour/oat mixture until coarse crumbs.
  • Spread over apple/blueberry mixture and bake in 350 oven for 30 minutes or until the fruit is cooked.
  • To serve: I usually make the crisp up earlier in the day. Before serving, I put the crisp in the oven at 250 for 15 - 20 minutes or until warmed, then serve it with ice cream.

Marsha's Apple or Blueberry Crisp image

I was making the blueberry crisp one night for our bible study and doubled the recipe. Well I doubled the blueberries and not the crisp. It came out runny, served my mistake over vanilla ice cream that night and still make it that way. It is especially good when the runny crisp is still warm.

APPLE-BLUEBERRY CRISP

APPLE-BLUEBERRY CRISP image

Categories     Fruit     Dessert     Bake

Number Of Ingredients 13

1 c (2 sticks) unsalted butter, cold, cut into small pieces, plus more for baking dish
2-1/4 c all purpose flour
3/4 c packed dark brown sugar
1/3 c plus 1/2 c granulated sugar
1/2 t ground cinnamon
1/4 t mace
1/2 t salt
1/2 c old-fashioned rolled oats
2 c blueberries
3 pounds apples (about 8) peeled, cored, and cut into thin wedges
Juice of 1/2 lemon (about 1 T)
2 T f;our
vanilla ice cream or whipped cream (optional)

Steps:

  • Preheat over to 375 degrees, with rack in the lower third. Butter a 3-qt baking dish and place on a parchment-lined baking sheet. Set aside In a large bowl, whisk together flour, brown sugar, 1/3 c granulated sugar, cinnamon, mace, and 1/4 t salt/ Using a pastry blender or your fingers cut in butter until large clumps form. Using a rubber spatula, mix in oats. Set aside In a large bowl, toss together blueberries, apples, lemon juice, remaining 1/2 c granulated sugar, flour and remaining 1/4 t sale to combine. Pour the fruit mixture into the prepared baking dish; sprinkle with the reserved oat mixture, covering fruit evenly. Bake until juices are bubbling and the topping is evenly browned, about 50 minutes. Cook slightly on a wire rack. Serve crisp warm tapped with vanilla ice cream or whipped cream, if desired.

Tips:

  • Choose the right apples: For a classic apple crisp, use a variety that holds its shape well when baked, such as Granny Smith or Braeburn. If you're using a softer apple, like McIntosh or Honeycrisp, you may need to add a bit more cornstarch to the filling to prevent it from getting too runny.
  • Don't overmix the topping: The topping should be crumbly, not doughy. If you overmix it, it will become tough and won't crisp up in the oven.
  • Use a deep baking dish: This will help to prevent the crisp from bubbling over in the oven.
  • Bake the crisp until the topping is golden brown and the filling is bubbling: This usually takes about 30-35 minutes.
  • Let the crisp cool slightly before serving: This will help it to set and make it easier to scoop.

Conclusion:

Apple blueberry crisp is a delicious and easy-to-make dessert that's perfect for any occasion. With its sweet and tangy filling and crispy topping, it's sure to be a hit with everyone at your table. So next time you're looking for a quick and easy dessert, give apple blueberry crisp a try. You won't be disappointed!
