This recipe is now back to my original posting as I posted it at Recipezaar many years ago. Recently I noticed that somehow the name got changed as did some of the ingredients. In 2005 I wrote that this is a moist light bread/cake with just a hint of cinnamon. Keeep an eye on cooking times as too long and it will be drier. Also leave in tin for about 5 mins before turning out onto a rack to cool completely. Slices can be served as a dessert topped with custard and whipped cream, or cold and buttered.

1 cup unsweetened applesauce
1 cup fat-free milk
1/2 cup packed brown sugar
1/2 cup egg substitute
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
5 cups cubed day-old bread
1/2 cup chopped peeled apple
1/2 cup fat-free whipped topping
1/2 cup fat-free caramel ice cream topping

Steps:

  • In a large bowl, combine the applesauce, milk, brown sugar, egg substitute, vanilla and cinnamon. Fold in bread cubes and apple; let stand for 15 minutes or until bread is softened. , Pour into an 8-in. square baking dish coated with cooking spray. Bake, uncovered, at 325° for 35-40 minutes or until a knife inserted in the center comes out clean. Serve warm with whipped topping and caramel topping. Refrigerate leftovers.

¼ cup applesauce
3 eggs
1 ¾ cups white sugar
1 teaspoon vanilla extract

1 cup whole wheat flour

3 cups peeled, cored and cubed apples
1 cup chopped walnuts

Steps:

  • Preheat oven to 300 degrees F (150 degrees C). Lightly grease two 9x5 inch loaf pans.

3 large Gala apples, peeled and cubed
12 tablespoons butter, divided
4 tablespoons honey
2 tablespoons ground cinnamon, divided
1 cinnamon stick
1 ¼ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon fine salt
1 cup white sugar
2 large eggs
½ teaspoon vanilla extract
1 cup chopped toasted pecans

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x5x3-inch loaf pan.
  • Combine apples, 4 tablespoons butter, honey, 1 tablespoon cinnamon, and cinnamon stick in a saucepan over medium heat. Cover with a lid and cook, stirring frequently, about 10 minutes.
  • While apples are simmering, sift flour, baking powder, and salt together in a bowl.
  • Combine remaining 8 tablespoons butter, remaining 1 tablespoon cinnamon, and sugar in the bowl of a stand mixer. Beat together until light and fluffy. Add eggs one at a time; beat until fully incorporated. Add vanilla extract.

Edited: I have also tried out the bread by using 1/2 whole wheat pastry flour and 1/2 regular flour, a tbl of wheat germ and less sugar to make it a tiny bit "healthier". It came out just as nice as the original.
