1/2 cup unsalted butter (softened)
3/4 cup granulated sugar
2 large eggs
1/2 cup buttermilk
2 cups all purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon nutmeg
1 cup apple butter
1 cup powdered sugar
2 tablespoons orange juice (water or milk is ok too)

Steps:

  • Preheat oven to 350 degrees F. Prepare a 9 X 5 loaf pan with baking spray.
  • Cream together the butter and sugar.
  • Add the eggs and half of the buttermilk. Beat until smooth.
  • In another bowl whisk together the flour, salt, baking soda, cinnamon, cloves, and nutmeg.
  • Add half of the flour mixture to the wet ingredients in the bowl. Beat, and then add the rest of the buttermilk. Beat again, and then add the rest of the flour mixture. Beat until just combined.
  • Stir in the apple butter until the batter is an even color.
  • Pour the batter into the prepared pan.
  • Bake 55-65 minutes, checking the center with a toothpick that comes out clean.
  • Let the cake cool and turn it out of the pan before glazing.

1/2 teaspoon fine sea salt
1/2 cup/120 milliliters vegetable, or other neutral, oil
1/2 cup/100 grams granulated sugar
1/2 cup/110 grams dark brown sugar
2 large eggs, at room temperature
1 1/2 teaspoons vanilla extract
3/4 cup/180 milliliters apple butter
1/4 cup/60 milliliters plain yogurt
Turbinado sugar, as needed, for finishing

Steps:

  • Heat the oven to 350 degrees, and lightly grease a 9-by-5-inch loaf pan with nonstick cooking spray. In a medium bowl, whisk together the all-purpose flour, whole-wheat flour, baking soda, cinnamon, allspice, nutmeg and salt to combine. Set aside.

¾ teaspoon baking soda
½ teaspoon baking powder
½ teaspoon salt
½ teaspoon ground nutmeg
¼ teaspoon ground cloves
⅓ cup butter, softened
1 cup sugar
1 egg
1 ¼ cups apple butter
½ cup raisins
½ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 8x4x2-inch loaf pan.
  • Mix flour, baking soda, baking powder, salt, nutmeg, and cloves in a bowl.
  • Beat the butter and sugar with an electric mixer in a separate large bowl until smooth. Add the egg and apple butter; continue beating until smooth. This recipe comes from the Virginia Apple Growers Assoc site. I have posted the original and my recipe that was a mistake to begin with, but we love it now. I used Apple Butter recipe #93886 from Margo.

2 cups all-purpose flour (I used half whole wheat flour)
1 cup brown sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups apple butter (divided)
1/2 cup apple juice
1/4 cup butter, melted
1 egg, beaten
1 cup raisins (optional)
1/2 cup chopped walnuts

Steps:

  • Combine flour, brown sugar, baking powder, baking soda and salt in a large mixing bowl.
  • In a small bowl mix 3/4 cup apple butter, apple juice, butter and egg together. Fold in the raisins and chopped nuts. Add the apple butter mixture to the dry ingredients and blend together. Pour half the mixture in a loaf pan that has been sprayed with cooking spray. Gently spread the reserved 3/4 cup apple butter over the batter. Pour the rest of the batter over the apple butter mixture and spread evenly over the top to cover. Bake at 350 degrees for 55 to 65 minutes or until done.
  • To bake "my mistake loaf" just put all the apple butter in the wet ingredients and blend into the dry ingredients. I cut up dried pineapple pieces and added with the nuts instead of the raisins. Pour the whole batter into the loaf pan and bake as above.
  • This makes a heavy moist bread that is delicious.
  • Any kind of nuts can be used and any kind of dried fruit that your prefer.
  • This can be sugar free using Splenda Brown Sugar blend and Margo's Apple Butter recipe using Splenda.
