Apple cider and brown sugar glaze is a classic glaze for cooked meats, particularly ham, but also for chicken, pork, and even vegetables. It is easy to make and adds a delicious sweetness and tang to any dish. The glaze is made with apple cider, brown sugar, butter, and spices such as cinnamon, nutmeg, and cloves. The apple cider and brown sugar are cooked together until the sugar dissolves and the mixture thickens. The butter and spices are then added and the glaze is simmered for a few minutes more. The glaze can be used immediately or stored in the refrigerator for later use.

SUNNY'S APPLE-BOURBON HAM GLAZE

Sunny's Apple-Bourbon Ham Glaze image

Provided by Sunny Anderson

Categories     main-dish

Time 4h20m

Yield 10 to 12 servings

Number Of Ingredients 8

1 cup apple cider
1 cup packed dark brown sugar
1/2 cup bourbon
2 teaspoons pumpkin pie spice
Teeny tiny pinch of ground cloves
3 tablespoons unsalted butter
Kosher salt and freshly ground black pepper
One 7- to 10-pound precooked spiral ham

Steps:

  • Preheat the oven to 325 degrees F.
  • To make the glaze, add the apple cider, brown sugar, bourbon, pumpkin pie spice and cloves to a large pot. Turn the heat to medium high and cook, while stirring, until the liquid reduces and becomes slightly thickened like a glaze, 10 to 15 minutes. Add the butter and stir to melt. Taste and season with salt and pepper.
  • Lay out plenty of aluminum foil to wrap the ham in and create a bed for it. Place the ham in the center of the aluminum foil and pull the sides up around it, leaving the top exposed. Pour over half the glaze, getting it into the spirals. Finish tightly wrapping the ham and place it on a rack in a roasting pan. Fill the pan with water, but do not let it touch the bottom of the ham.
  • Cook until the internal temperature reaches about 140 degrees F (gauge 15 to 20 minutes per pound). Remember, it is already cooked, so you just need to bring it to temperature without drying it out.
  • Remove the ham and raise the oven temperature to 400 degrees F. Pull back the aluminum foil (watch out--it's steamy and hot!!). With a brush and the remaining glaze, slather the top of the ham, allowing the glaze to get into any creases of the spiral you see. Place back in the oven uncovered but still sitting in the foil and roasting pan, an additional 10 to 15 minutes. Remove and rest 10 minutes before serving.

BAKED HAM WITH BROWN SUGAR AND APPLE GLAZE

Baked Ham With Brown Sugar and Apple Glaze image

This is an outstanding ham recipe and has become a family favorite! The ham can even be fully cooked, covered and refrigerated up to 2 days ahead of time, and you can prepare the glaze a day ahead also. Remember save the bone from the ham and freeze for pea soup! Purchase a butt-portion ham (water-added) that is wrapped in heavy plastic for this, the butt is the best! Cooking time is for the last stage of cooking the ham, prep time includes the first cooking of the ham and making the sauce.

Tips:

  • Selecting the Right Apples: Choose firm, tart apples like Granny Smith, Honeycrisp, or Braeburn. This will provide a nice balance to the sweetness of the glaze.
  • Achieving a Golden Glaze: To get a rich golden brown glaze, brush on a final coat right before placing the pork in the oven. Keep an eye on it during baking to prevent burning.
  • Tenderizing the Pork: Cook the pork loin to an internal temperature of 145 degrees Fahrenheit for medium-rare or 155 degrees Fahrenheit for medium. Rest the pork for 10-15 minutes before slicing to retain its juices.
  • Elevating the Glaze: For a more complex glaze, consider adding a splash of apple cider vinegar, a pinch of cinnamon, or a touch of Dijon mustard. These ingredients will enhance the flavor profile.

Conclusion:
