1-1/2 cups all-purpose flour
3/4 cup sugar
1-1/2 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/2 teaspoon salt
2 eggs
2 tablespoons canola oil
2 cups chopped peeled tart apples
1 cup fresh or frozen cranberries
1/2 cup chopped walnuts

Steps:

¾ cup white sugar
2 tablespoons vegetable oil
1 egg
1 ½ cups all-purpose flour

50 g rolled oats
240 g self raising flour, wholemeal
1 teaspoon baking powder
125 g dried cranberries
75 g dark muscovado sugar
1 teaspoon ground cinnamon
60 ml honey
300 ml skim milk
60 g dried apples, diced small
1/2 teaspoon allspice
30 g walnuts

Steps:

  • Place oats into a bowl, pour over milk and soak for 30 minutes. Preheat oven to 180 degrees. Sift flour and baking powder into a large bowl. Add the oat mix, cranberries, apple, sugar, spices, honey and mix well. Spoon into a 900gm non-stick or greased loaf tin and sprinkle with the walnuts.
