Apple, Cranberry & Cinnamon Boursin Cheese Salad image

Found this on the Women's Day site - sounded like a good winter salad but I couldn't find the Boursin Cheese so I adapted this to be "user friendly". The 'home made" version of the Boursin cheese needs to be made a day ahead of time. The prep time does not include the Boursin cheese refrigeration time.

Tips:

  • Choose firm, tart apples for the salad. Granny Smith or Honeycrisp are good options.
  • Use fresh cranberries for the best flavor. If you can't find fresh cranberries, you can use frozen cranberries.
  • Toast the pecans before adding them to the salad. This will bring out their nutty flavor.
  • Use a good quality Boursin cheese. The flavor of the cheese will really shine through in this salad.
  • Dress the salad just before serving. This will prevent the dressing from wilting the greens.
